Yellow Squash and Corn Casserole

I followed the recipe, but I also added 1 can drained whole kernel corn along with the creamed corn. I really like corn. This was delicious. I like the sweetness and the creamy texture that resulted. I baked it for 40 minutes. The Vidalia onions and the edges of the squash were still slightly crunchy. I would definitely make it again.

Mexican Pot Roast

This was one of the first things I cooked for my boyfriend. If the way to a man's heart is through his stomach, this one worked! My son likes it a lot as well. Of course you can vary the heat based on the type and amount of chilies and hot sauce. Some are hotter than others, but I've found that most of the heat seems to be in the liquid with this. The more the meat is strained the less hot it seems to be. Once it's done I pull the meat out and shred it. Then I return it to the broth and cook it a little longer. We eat it on tortillas.

Simple Savory Quinoa

We really enjoyed this. Instead of celery and carrots i substituted frozen carrots and peas. I put them with the onion still frozen. They thawed nicely while the onion cooked. I used chicken broth and lemon juice because I didn't have vegetable broth or a lime. It's hard to get the family to try some of the healthier options like quinoa. This is a great way to get them started!

Drunk Monkey Muffins

This recipe was not bad . My muffins turned out a bit denser than I had hoped. I used an irish whiskey. I liked the flavor it added. It mixed well with the banana flavor. I think I might try, again, using a coconut rum, and play with the recipe a bit to get a lighter muffin.

Cinnamon Rolls III

This is my go to cinnamon roll recipe. I've been using it for years. For the cinnamon filling I increase the butter to 1/2 cup. Then I mix it with the brown sugar, cinnamon, and, nuts if I'm using them. I spread this mixture on the rolled out dough. I find it easier and less messy that spreading the butter, and then sprinkling on the other ingredients.

Sweet and Spicy Stir Fry with Chicken and Broccoli

I used Roasted Red Chile Paste and regular soy sauce. I ended up putting in about 1/4 cup water and a little bouillon powder instead of 1/8 cup chicken stock. It was delicious!

Amaretto Cream Cake

I made this into cupcakes. I skipped the apricot filling. I used 3 cups of powdered sugar instead of the 4 the recipe called for in the icing. The icing wasn't as firm without the 4th cup, but the flavor was awesome! They were a big hit at the picnic.

Creamy Corn Pudding

This is somewhat quiche like. I enjoyed it. When I make it again I will add some salt and more cheese. Probably shredded cheddar or colby jack.

Oven Fried Party Drummettes

These were super easy and delicious. My family prefers boneless wings so I cut up boneless breasts into chunks and used it in place of the drummettes. I also added some crushed red pepper to the flour mixture. I cooked the chunks for about 10 minutes on each side. They didn't brown as nicely since I cooked them for a shorter time. I think I'll finish them under the broiler next time.

Frijoles a la Charra

I have been making this recipe for several years. It is my "go to" recipe when I make Mexican food of any kind. The only change I make is that I substitute a 14.5 ounce can of diced tomatoes instead of the fresh tomatoes. I always have canned tomatoes on hand, and I only really like fresh tomatoes in the summer when they are in season where I live. Also, I never soak my beans beforehand, and they always turn out great.
