Minestrone Soup I
Good, tasty soup. We used red potatoes since they are SO GOOD. We'll make it again for sure. I don't know if margarine is somehow better than butter or olive oil for this one... but as a rule i don't allow the stuff in my kitchen. I mean it's vegetable oil that has been chemically altered to stay solid... no thanks. Anyhow, if you care about trans fats I used butter and it was delicious.

Italian Vegetable Soup
This was a great blend, and seemed heathy. I didn't feel like measuring the vegetables, and just tossed stuff in till it seemed right. Somehow I forgot the macaroni (I know, right?). It was still a huge success, and we really enjoyed eating it. Plenty of left overs for the next day. We'll definitely make it again.

Mom's Salmon Mousse
This was a great recipe! I used frozen salmon instead of canned- just ripped it in pieces (after removing the skin). It was awesome! I used Italian style bread crumbs since I had them handy, and put it in a 9 inch pie pan instead of the loaf pan like someone else mentioned. It was good hot and cold! Will definitely do this one again.
