Cabbage Roll Casserole

This was delicious. Since I didn't have quite as much meat (I used ground chicken) as the recipe called for, and I had cooked basmati rice to use up, I briefly sautéed the chopped cabbage and then added a bit of water to steam and mostly cook it, then I set is aside, while I cooked the meat and onions. Then, I added as much cabbage as I thought was appropriate,* along with the tomato sauce and simmered it for a while longer. Then I added the rice and adjusted the seasoning, allowing the rice to take on some of the flavours of the mixture. I didn't bother baking this in the oven; the dutch oven on the stovetop worked beautifully. Next time I make this, I plan to add some chopped bacon, for more depth of flavour. (Just don't tell my Ukrainian MIL, lol.) *Leftover cabbage is always nice to have on hand, anyway!

Quinoa Side Dish

I did not care for this recipe. My husband ate his but didn't want it for lunch the next day (that never happens). I don't usually toast it before I cook it; not sure if I want to try that again. :-( It seemed lacking in flavour, except that it was a bit bitter, even though I thoroughly rinsed the quinoa before cooking it. I am not sure I want to use the red variety again, at this point...

Slow Cooker Baked Beans

Finally, a recipe for baked beans I can make without pork, and even better, in the slow cooker! I substituted turkey bacon and it worked just fine. The only caveat for that is to just barely cook the turkey bacon if you use it, as it does get a bit overcooked, otherwise. I found that it took longer than the stated time - by a few hours - despite the fact that my slow cooker tends to be too hot / cooks faster than many recipes call for. (I did soak the beans overnight - a bit longer, even, but they still weren't soft enough at the end of the suggested cooking time.)

San Francisco Style Bagels

When it comes to baking, especially breads, weight is much more accurate than volume. 1 Cup of bread flour = 4.5 ounces -- BUT, here's the caveat: make sure your flour has been stirred if you're measuring by volume, because flour settles a LOT during storage. Volume measurements for baking always assume that the (flour) has not settled.

Taco Casserole

We all loved this one, but I did make a few changes, partly based on some other reviews, like adding a layer of refried beans on the bottom. Also, I found it to be a little dry, so I will add more salsa next time (and perhaps a bit of chicken broth...).

Grilled Chicken Burgers

These were delicious! At first, it seemed like a lot of work for burgers, but it's well worth it! Next time though, I will just use my food processor to finely chop the veggies. Some found them them a wee bit spicy (I didn't think so), so if you're squeamish that way, be careful.

Egg Nog Cookies

Soooo good! Nice and soft in the middle (don't over-bake them) and not overpowering with the eggnog flavour. The icing was a bit too sweet - I will use less next time. Can't wait to make these again!

Chicken Enchiladas with Creamy Green Chile Sauce

Really yummy, but a bit more work than I would have liked... (no, I'm not lazy, just busy). I will make them again, though, but not on a week night -- and I will make double the sauce quantity and freeze some, as it does freeze nicely.

Blueberry Stuffed French Toast

Too sweet, but I gave it 4 *'s because I know that if I make it again, I can easily adjust the sugar. Also, most of my family doesn't seem to like sweet breakfasts. I wouldn't bother making the compote next time, either - we all preferred maple syrup.
