Broccoli Barley Soup

This is going to be my cream of broccoli soup recipe from now on! I omitted the mushrooms and added carrots with the broccoli. You could definitely use milk instead of half and half.

White Bean Dip

I agree with other reviewers that this would be better with parsley. I used a good quality extra virgin olive oil and the flavor really comes through--which I like--but it's a bit strange with the cilantro. To make it with cilantro, I would use a lighter olive oil and lime juice instead of lemon.

Cranberry Glop

I put the apple chunks(with peels on) and cranberries in the food processor to chop them up. Then served with vanilla ice cream as a dessert. It's like an apple and cranberry crisp but is heavy on the cranberries--which is good!!! I actually cut the white sugar down to less than a 1/2 cup. That seems strange for a dessert but the ice cream adds plenty of sugar and sweetness.

Pumpkin Bars III

Caramel Apple Dip

Tastes just like what it's made of--cream cheese and caramel. Yum! I halved the sugar and it's still plenty sweet. It definitely can be made ahead of time and served from the fridge--this makes the recipe much more appealing to me.

Cinnamon Sugar Cookies

I didn't roll dough into logs or refridgerate--just rolled into little balls, rolled in cinnamon-sugar, and dropped on a cookie sheet. Very good. Made less than 3 dozen small cookies. I had A LOT of the cinnamon sugar mixture left over. Next time I will only mix a small amount of cinnamon and sugar to roll the cookies in--can always mix more if needed!

Macaroni and Cheese III

DELICIOUS and EASY!! I love that this recipe doesn't use any canned soup--too much sodium! Changes I made: sour cream in place of the yogurt, canned diced tomatos in place of the stewed tomatoes, a little more cheese. This will be our mac and cheese recipe from now on.

Eggplant Antipasto

A great way to use fresh veggies from the garden! This is really easy to make. I love how the vegetables stay crunchy and I LOVE the green olives. I stirred in fresh tomato slices (also from the garden!) right before serving and, mmmmmmmm!!! I think it would also be good warm over pasta.

These are so good and so easy to make!!! I used fresh lemon juice. Don't worry when the lemon top is really thin and watery before baking--it'll firm up.

Almost Eggless Egg Salad

This tastes just like regular egg salad, has the same texture, and has the same color (from the turmeric). And you get all that without the harmful cholesterol!

Wine Fondue

This fondue recipe is a keeper! We used it to cook chicken and shrimp and it was preferred over the vegetable oil that we normally used. A bonus is that it smells wonderful while simmering in the fondue pot!
