i first used this recipe a few years ago for our neighbourhood St. Patrick's Day Feast. It is now a tradition on the Sunday Before, and it grows each year. The only addition I have ever made is the addition of seasoning to all layers. I salt the water the potatoes boil in, add a little Celtic Grey Salt and ground mixed peppercorns to the Cabbage and Onions as they brown. I use the seasoning bacon that you can sometimes find in the mega mart, it's ends and pieces, but works great. I usually double this recipe, but this year will have to triple it. This also works great with Fried Chicken, Roast Turkey and Pork Roast. The only year I didn't make this was the year I had the Irish Stew.
