Really nice cookie!. I was looking for something particular in my shortbread recipe and found this to be just what I was looking for!....Super easy and quick to make. Just have to really watch them in the oven so they don't burn or over bake. I turned the temp down a little bit and baked till they were semi firm and let them cool on the counter...ate one still hot and they didnt fall apart, not crumbly at all!...Will definetly bake these again! Made these again today and just thought I would comment that this recipe doubles GREAT!!!!!

These cookies are VERY TASTY!!!!!!!!....I was looking for something similar to the ones Tim Hortons has at christmas and these are pretty darn close!!....Not over powering in flavour, nice and soft, easy and quick to make. I did replace the shortening with salted butter (that's all I had) and just let it all sit in the fridge overnight instead of just 3 hours and they came out just find!...A little hard to work with at first but worked out good. I used a 25ml spoon to make my cookies even in size and once on the cookie sheet I pressed them down a bit with the palm of my hand, turned the cookie sheed around half way through baking and took them out just after they start to 'crack'...I lightly touched them with my finger, if they were semi firm I took them out, cooled on the counter while I put the next batch on the sheet and in the oven then transered the cookies to a air tight container. I also sprinkled some natural sugar ontop of some before popping them in the oven!...Definelty a recipe to keep and make again!!!
