Jalapeno Popper Spread

Loved this recipe -- used fresh jalapenos instead of canned ..Baked in oven with panko crumbs on top -- nicely browned to perfection!

Sam's Famous Carrot Cake

I was hoping to see more people talk about the amount of batter and size of pans.. I used a 9X13 pan and the batter was so high,I took some out into an additional 8X8 pan. But the cake did not rise very high -- maybe I should have left the whole thing in the 9X13 pan... I don't like the soda so I replaced it with baking powder. Soaked the raisins in the pineapple juice. Used yogurt instead of the buttermilk. The cake was moist and dense, great taste -- not mushy.. Will try again with one pan and what happens with all that batter.

Tomato and Mozzarella Bites

Yes -- this is good...Marinated the cheese, tomato and basil in the oil/balsamic for about 20 minutes and then put them together...Some people even requested a dipping bowl on the side for some additional flavour!

Italian Breaded Pork Chops

Loved this recipe - I seasoned the flour with salt and pepper for dredging as per other reciews. Ididn't use the parsley since I had it in the seasoned bread crumbs. Had 8 chops with only the 2 eggs and it turned out fantastic. Will definitely make again!

Love these pancakes.. They turned out a wee bit too thick, added some more milk and cut down the butter to 2 tbsp... EXCELLENT!

Sweet Banana Bread

Love the recipe -- BUT--- I only had instant pudding. I think it thickened up too fast, being instant - that it made the dough super super thick! I was worried that it would fall flat. Will use the regular pudding next time. I also added pecans for flavour!

Avocado Soup with Chicken and Lime

This recipe is almost exactly as a mexican dish Soupa De Lima. Excellent soup, I added 1 cup of black beans and corn. USed tortilla chips and shredded cheese for toppings. Yum!

Sopa De Lima (Mexican Lime Soup)

Excellent soup - great flavour but still made some changes. Didn't use tomatoes, oregano, thyme or chile pepper. Used 2 tetra packs of broth with only 1 1/2 limes. Added 1 cup of frozen corn and some black beans. Topped with tortilla chips and shredded cheese. Even the kids loved it!

Caramel Apples

Love them apples! I kept the washed apples overnight in the fridge to get them nice and cold. After rolling in the caramel, I dipped my apples in toasted pecans. The nuts stopped the caramel from pooling on the wax paper and they presented BEAUTIFULLY! No fuss to get them off the paper either!

Banana Banana Bread

Really Really Good! I added a splash of vanilla and cinnamon plus 1 tsp baking powder (to make sure it was not too dense) Will definitely make it again.. One of the best that I have tasted.
