I have been using this site for 8 years.  I have posted a few recipes but this is my first blog entry...here.  I do have another - Brig's Big Blog -  with FEW entries.  This one is dedicated to all things food.  I teach high school Food and Nutrition.  So, I have a little experience.  28 years of teaching teens how to cook.
This summer I am having a new experience.  I am back at home with my parents - most of the time- helping Dad care for Mother who has had cancer for 3 years and is probably in the last months of her life.  Now, I do not want to shortchange any miracles God may have planned but, short of one, we are looking at a short time.
Cooking something that she will enjoy eating is a challenge.  The chemo did a number on her tastebuds so nothing much tastes good to her.  Her standby favorites, like peanut butter, are noelk get.  The appetite stimulant makes her hungry.  The other medications, and progression of the disease, are making communication sketchy sometimes and making her sleep the rest of the time.  They have also dealt havoc with her memory and recall.  Therefore, when she wakes up she is so hungry that she wants to eat RIGHT AWAY but she can't always tell you what she wants.  If she does tell you, it does not always come out as what she really wants.  So...
From Allrecipes I have recently prepared Miss Betty's Super Quick Dinner Rolls.  Mother said they were good.  Daddy liked them also.  Very easy to make out of ingredients readily available, just flour, milk and mayo.  Just a simple, plain roll but easy and good when you need something quick.  I also made a Mandarin Orange Salad that has been enjoyed for many meals.  It made a lot for just the three of us.  I will post that recipe soon.  Until then,
     Eat well and be happy.

It must be a tremendous comfort for your father to have you there to help. I hope the time you have with your mother brings more joy than sorrow. Best wishes for you all at this very difficult time.

I would make some things ahead, like some Jello, puddings ,applesauce, etc. Does she like smoothies? have your ingredients handy, so it can be made quickly-even a small one to get something to her quickly while you make something else that may take more time. Take it one day at a time & hope today is a good one.

Thanks for posting. I have a co-worker who is battling cancer and she has been an inspiration for me. When I think I'm having a bad day, I think about my co-worker and realize that I really have it great. Your post just that did that for me. Thank you!

Looking forward to more posts by you. You've got to have some very interesting and funny stories about the teenage kitchen exploits you've witnessed. What a blessing to your mom and dad you're being! Peace and comfort to you and your family, especially mom and dad!
