Double Layer Pumpkin Cheesecake

I don't like pumpkin pie at all, so I was very hesitant to try this recipe. BUT...I'm extremely glad I did. My sister-in-law always has a large (20-26 people) family Thanksgiving and most everyone brings something. Since everyone who comes loves pumpkin pie, I thought I'd give this "kicked up a notch" recipe, a try. It was easy to make, and since it does require chilling, I was able to make another dish. When dinner was over, I went to collect my remaining dishes only to find the Cheesecake Pumpkin pie plate was empty! Off all the desserts that were brought, it was the only one which had NO left overs! Thanks Stephanie, I think! I would have liked a few bites to take home with me!

Traditional Lemon Meringue Pie

I added the extra egg white to the meringue as well as a little sugar. To the crust, I used 1/2 shortening and 1/2 unsalted butter, instead of all one type of fat. I also added 1/4 tsp salt to the crust. The combination, as well as the original "lemon custard" recipe, made the pie a little more shortbread like. That suits my sweet tooth and came out really well!

Roquefort Pear Salad

Looked great, sounded good, but even keeping the ingredients separate until the get together, it looked awful and didn't taste that great. Hardly anyone tried it! Sad face!!!! Maybe making it on individual plates would be better! I probably won't try it again though. Sorry! My taste is strange- so says my husband!
