Chicken Scampi I

Reviewed: Apr. 5, 2003
It was an O.K. meal for me, but my husband just loved it!! I served it with rice, and he asked for second. As I did, it would be better to add onions, too.

Honey Mustard Dressing II

Reviewed: Apr. 5, 2003
This is the best honey mustard dressing that I have ever made and tasted! It goes well with almost any kind of salad. I think this recipe is better than a store-bought dressing or in a restaurant.

Dutch Apple Pie with Oatmeal Streusel

Reviewed: Apr. 5, 2003
With a scoop of icecream...MMM, YUM! I loved the cruncy topping and not too sweet apple filling. This is better than any Dutch apple pie you can buy from a grocery store.

Soba with Toasted Sesame Seed Sauce

Reviewed: Apr. 10, 2003
If you want to eat a healthy dish, you've got one here! The dressing is very good; subtly sweet and nice addition of sesame and sesame oil. I also added cooked and cubed chicken and chopped mango. This turned out to be a healthy yet hearty meal itself. I became a fan of soba noodles.

Corn Fritters with Maple Syrup

Reviewed: Apr. 27, 2003
Excellent!! They are puffy and very easy to make. I would double the ingredients next time. Although the fritters are a bit sweet, they would be also good without sugar and dipped into ketsup and mustard.

Zucchini Casserole II

Reviewed: May 2, 2003
Great side dish recipe using vegetables. I reduced the amount of butter to 1/4 cup and combined all ingredients together. After baking it for 10 minutes, I also added cheddar cheese. The dish turned out very moist and was a nice side with chicken with gravy. Would make this again.

Fast Creamy Tomato Penne

Reviewed: May 3, 2003
This was an easy and good pasta dish. My whole family loved it. I used spaghetti instead of penne and replaced ground pork with bulk sausage. Thank you for the recipe.

Sesame Lemon Crisps

Reviewed: May 11, 2003
I love sesame cookies, and my husband and I absolutely enjoyed these cookies (with a cup of peach tea!). Lemon flavor added a great change in these crisp sesame cookies. Although I expected these cookies to be more shortbread texture, they were great served when still warm and crispy.

Bacon & Eggs Spaghetti

Reviewed: May 18, 2003
I like caronara, but I am hesitant to eat raw eggs. So, this dish, slightly different from carbonara though, is a good way to enjoy spaghetti. To add color, I toss some chopped spinach with eggs and cheese. This pasta recipe is easy and pretty good; I might make this again when I don't have much time to prepare dinner.

Carrot Cake VII

Reviewed: May 20, 2003
Very moist and easy carrot cake recipe!! I actually used this recipe to make carrot muffins. I reduced the amount of sugar to 1 and 1/2 cups, but the muffins were still good. The next time I make, I would add some chopped walnuts or crushed pineapple. Thanks for the recipe, Toni!

Lettuce with Hot Bacon Dressing

Reviewed: May 22, 2003
Very satisfying salad recipe! Like the other reviewers, I also substituted lettuce and radishes with baby spinach and chopped carrots. I particularly liked the not-too-sour dressing, and my family enjoyed this dish with rice pilaf. Thank you for the recipe, Vera.

Glazed Lemon Bread

Reviewed: Jun. 7, 2003
I used this recipe to make lemon muffins. They were very moist and not too sweet. The recipe made nine beautiful muffins! Like the other reviewers, I used 4 teaspoons of lemon juice for the glaze, which wasn't still enough! Thanks for the recipe.

Asian Barbecue Turkey Thighs

Reviewed: Jun. 15, 2003
Just wonderful! An ordinary barbecue sauce suddenly became our family's favorite sauce. I used a bottle of honey barbebue sauce and added only two tablespoons of soy sauce. Oh, I also used chicken thighs instead of turkey. Can't wait to try again. Thanks for the recipe.

It was O.K. to me. Needs to be spiced up little bit, such as pepper, garlic, or ginger.

Basic stew recipe. Kind of bland for our family's taste. I put some chopped garlic and worcestershire sauce.

Broiled Scallops

Reviewed: Jul. 31, 2003
Broling must be the best method to cook scallops! I used chopped fresh garlic and parsely, and substituted bay scallops with jumbo sea scallops. Light and very flavorful dish! Keep an eye on the scallops while broling; you don't want to overcook them.

Florentine Curried Chicken

Reviewed: Oct. 8, 2003
Tasted like a dish called chicken divan but with a twist. I cooked chicken first, and it took about 30 minutes in the oven until it got bubbly and heated through.

Marinated Ranch Broiled Chicken

Reviewed: Oct. 22, 2003
Pretty Good! I used boneless skinless chicken thighs and white vinegar. I only had 21/2 hours to marinate the chicken, but the chicken tasted very flavorful. Easy and great for a weekday menu.
