Party-Size Greek Couscous Salad

Great idea! I made this with Tabouleh instead of Couscous (more substantial and healthier). Scaled down to 7 servings (one package of Tabouleh). The mix already had lots of spices, so I omitted the parsley. Also left out peppers and tomatoes since hubby doesn't like them. Made the night before and put in fridge for hubby to eat for his lunch the next day. He ate it with some gyro meat and some homemade hummus and veggie chips. He said it was Awesome :)

Lemon Mushroom Herb Chicken

Just average. Kind of had a sogginess to it after breading it and then adding all that liquid afterward. Overall flavor was just okay... kind of reminded me of Chicken Helper.

Chocolate Cavity Maker Cake

Easy and delicious! It looks pretty too. Simply sifted confectioner's sugar over it as a finishing touch. Used Ghirardelli milk chocolate chips and 1/4cup milk combined with 1/4cup Kahula instead of a whole 1/2c of the liquor. Also dusted buttered pan with Nestle cocoa (had some hot cocoa packets laying around) instead of flour. Baked for 55 min (5 min less than recommended), and it came out perfect. However, I have a small oven and it may take less time than a conventional.

Corn and Crab Bisque

This had excellent taste, but it only got 4 stars because the consistency was very thin. The title should be "soup", because "bisque" implies a creamy, thicker broth. I added about 2T corn starch, and it still was not very thick. I also used heavy cream instead of half and half. Perhaps less broth and more flour/corn starch and heavy cream?

Pork and Bean Bread

I substituted unsweetened apple sauce for about half of the oil. Otherwise, I followed the recipe exactly. It was pretty moist, smelled nice and tasted good but not great. It was kind of bland I thought. I guess I'm just not seeing what everyone else thought was so great about this bread...

White Chili

This recipe is SO easy and my husband and I both love it. I've tried it with the ground turkey, and then again with canned chicken chunks and it is awesome both ways! If you cook it slowly and on a lower heat (like the recipe says) and you stir it often, you will not get any burned cheese on the bottom of your pot.

Cheese Cake Cups

Very tasty!!! I substituted some sour cream for about 1/4 of the cream cheese, and it was excellent. I might try using plain yogurt next time. Wonderful with cherry pie filling on top! I did find, however, that the vanilla wafers weren't big enough to cover the bottoms completely, so I had to crunch them up. Maybe next time it would be easier to use graham crackers... Also, these take much closer to 25 minutes to cook.
