Blueberry Upside-Down Cake

Reviewed: Aug. 28, 2011
Very nice cake! I even read the recipe wrong and kinda did my steps out of order and it was still perfect! lol! I did double the almond extract because I love almond and I added a bit more zest. Would recommend and will certainly make again...absolutely terrific!

Ramen Coleslaw

Love it. Only difference I do is I use sesame oil, then double the dressing and double the noodles, sesame and almonds. It's fine without being doubled..but we kinda like more dressing than most I guess. Good stuff I tell ya! Yum!

Spinach and Feta Pita Bake

Reviewed: Aug. 8, 2011
Excellent! I didn't have mushrooms and used regular jarred pesto sauce instead of the tomato one. Also, no need to drizzle with oil, as the pesto already has olive oil in it. Very tasty. Served these with a grilled chicken sausage and fresh fruit...great meal!

Pico De Gallo

Reviewed: Aug. 5, 2011
We enjoyed this a lot. I felt like it was missing a little seasoning so I threw in some taco seasoning, which added a little kick to it. Also squeezed in half a lime. Great recipe though, as you can adjust things easily according to your taste.

Cheesy Potato Salad

Reviewed: Aug. 1, 2011
Okay, 5 stars because I made a few changes. First off, forget the sugar all together! Blek..not necessary. Next off, double your sauce and add ins. Thirdly, I added a heaping tablespoon of garlic seasoning (from Costco) and then another heaping tablespoon of dill. Absolutely perfection.

Lemon Sheet Cake

Reviewed: Jun. 29, 2011
We enjoyed this cake a lot. My only criticism would be that (I thought) the frosting was a little sweet and heavy. I would have liked a fluffier frosting on it, with maybe some lemon rind or something in it. But it is a great cake regardless, and perfect for a potluck or family gathering.

Banana Crumb Muffins

Reviewed: Jun. 28, 2011
These were very nice. I got lazy and didn't do the crumb topping, so instead I just sprinkled some cinnamon sugar on them and they were great. ALso, I added a dash of cinnamon. Otherwise, I followed everything. Very nice muffin recipe and great way to use old bananas.

Grilled Corn in Husks

Reviewed: Aug. 15, 2009
Eh..not that impressed. Just as easy to do it in foil. The butter and parsley and cheese was nice..but wrapping and soaking didn't do anything special for this recipe.

Love it! It's really better the second day though..gets more moist. Let it sit overnight before you dive in.

Hasselback Potatoes

These are a pretty presentation. I too, had trouble getting them to really fan out. I also thought they needed some color..parsley maybe? Kinda blah looking..they were okay. I would do them again, but would add some herbs for color and more taste.

Made this one for the Superbowl. OH MY..good stuff! Let it sit overnight. Flavor really intensifies nicely if you let it sit.

Zucchini Tomato Pie

Agree with the others. Saute your veggies first, add some herbs. And double the amount of veggies, or you're left with a really bready dish. I think next time, I'll add some cooked potatoes to this. I think that would be great.
