Chewy Chocolate Chip Oatmeal Cookies
I made this recipe last night and it turned out amazing! I did some changes per other's reviews with adding 1/2 c more flour, 1/2 tsp more baking soda, 1/2 tsp LESS salt. I also did some changes per my own taste buds by grating about a small navel orange zest (this totally makes the cookies!!), 1 tsp cinnamon, and added flax seed so I don't feel so guilty! :)

Fluffy Pancakes
First time making these pancakes and they were AMAZING! Five stars definitely suits it! I used rice vinegar instead of white vinegar (that's all I had on hand) and it still turned out great! I also added a capful of vanilla and a 1/4 tsp of cinnamon. I sifted all the dry ingredients together and combined the wet with the dry, making sure NOT to overmix. I probably mixed it with a fork no more than 8 turns (gently). There are going to be lumps, but do not worry! Also cook on med-low heat to make it it cooked through since it was on the thicker side, and didn't want it to burn. My bf didn't even want pancakes and he still had a fair share! I made 7 pancakes using the 1/4 cup. Added fresh blueberries on the side..yumm!

Yummy Sweet Potato Casserole
I made this for the first time for today's Thanksgiving dinner. IT WAS A HIT! I definitely took other's advice about it being overly sweet, so I made it without sugar entirely!! I also read that others doubled the vanilla extract to 1 tsp, which I also did. So instead of putting sugar, I used pumpkin pie spiced marshmallows and chopped pecans on top. This way, the sweet potato was highlighted without it tasting like a dessert during dinner. (It's also guilt free because it isn't loaded with sugar, and didn't have to use the extra butter for the topping- double whammy!) :)
