Tuna and Noodle Salad Light

Very delicious - zesty and light! But like others I had to make some modifications first: - used less oil - added a few more vegetables (corn, green peppers) - let the vegetables marinate in the oil/vinegar/seasoning (cajun seasoning is amazing with this) for a little bit then drained it (don't know if you need that much vinegar) - mixed in the tuna - sprinkled parmesan cheese on top and VOILA!! I had to have more than one helping! Enjoy!

Green Beans with Almonds and Caramelized Shallots

Unexpectedly really yummy...I hadn't ever tried sugar with my green beans before. I altered it by using less sugar (1 tablespoon), less butter (a little over 1 tablespoon), substituting yellow onions for shallots, sliced instead of slivered almonds (so I didn't blanch them), and french style green beans (so I didn't steam them ahead of time, just stirred them in). It turned out really good. Next time, might try a hint of lemon or vinegar for added tangy flavor and try olive oil instead of butter.

Pressure Cooker Beef Stew

Yummy! Did a few minor changes such as substituting flour for cornstarch, 2 cubes of bouillion, boiling the potatoes on the side, and adding peas and corn on the cob sections. Definitely will be a keeper, especially in the fall/winter season!
