Quinoa Salad with Grapefruit, Avocado, and Arugula

Love, Love, Love. Just a fun and yummy salad with a beautiful merriment of flavors. I have made it both with and without the mint and I don't know that I even noticed so if you don't have mint on-hand don't fret. I also used Spinach once as well instead of Arugula but I do like the spiciness of Arugula.

Red Pepper-Salmon Pasta

Yummm. I made this for my in-laws and everyone just loved it. I followed some of the other reviewers suggestions as well. I didn't use the blender, just chopped everything very well, I also added some cream to the sauce as well. I just used one jalepeno and could barely taste it. If I hadn't been also serving to my kids (1 & 3) I would have tried a bit more. Also used bow tie pasta. Served with roasted asparagus and some good bread. Delish! I can't wait for an excuse to make it again.

Cafeteria Macaroni and Cheese

This is easily the worst meal I've ever made. I followed the recipe exactly and it turned out awful. It had absolutely no flavor and lacked any 'creaminess'. I have no idea what I did wrong, but we didn't like it, and my husband and I are NOT picky eaters.

Chicken Lasagna I

I have made this several times and everyone just loves it. I have added in a layer of spinach a couple times just to sneak in a good veggie. But its great either way. Freezes well. Using the 'no-boil' lasagna noodles makes it even easier. I like to use a bit more cheese too.

Florentine Artichoke Dip

Once I make this for family or friends, people beg me to bring it again. It is always a hit. We like it with Tortilla chips - scoops are best.

Roast Sticky Chicken-Rotisserie Style

This was my first experience making a whole chicken. My husband now thinks I am a great cook!! It was so easy and fun to do. It turned out wonderful and we hand yummy chicken leftovers for the rest of the week.
