Buffalo Chicken Wings I

Recipe turned out great, although I overcooked the chicken... I read the back of a bottle of Franks and it doesn't say anything about adding vinegar so I left it out. They turned out great!!

Chicken Enchiladas II

This was outstanding!!! I doubled the recipe thinking they would wouldn't be enough to feed my family of 6 but they were each so big that I ended up with plenty for leftovers. Great recipe and now a favorite for the kids and adults alike.

Texas Chicken Quesadillas

These turned out great. I made two separate batches, one for the wife and one for the kids. For the kids, I left out the onions and baked them as suggested. For the wife I used the onions and then fried them in a teaspoon of olive oil. The honey sauteed onions are a plus, as is frying.

Like others, my family is not really into kidney beans so I eliminated one of the cans and then browned some ground beef and mixed in a can of mild green chili peppers. It's virtually a augmented taco salad. It was good, but nothing special.

Easy Slow Cooker Meatballs

Spaghetti Pizza II

This was the first time I ever tried a recipe like this and am proud to say that it was a hit. I used leftover spaghetti as well as leftover meat sauce. Not only did my very picky kids loved it but my extremely picky wife gave it a thumbs up as well.

Apple Yam Casserole

Made this for Thanksgiving. It was very, very dry and uncooked. Ended up recooking it afterwards and adding some more traditional items to it such as marshmellows.
