Molasses Cookies

These cookies are really good and full of flavor. I did use only 1 tsp of the baking soda. Will definately make these again.

Mom's Ground Beef Casserole

I used this recipe as a starting point as I didn't have on hand a green pepper or egg noodles. I browned the hamburger, garlic, onion, frozen corn, and added diced carrots and diced potatoes, salt and pepper to taste. While this mixture browned I boiled dried homemade style egg pasta. Once the noodes were ready and the hamburger mixture browned I added the noodles, 1 can cream of potato soup with 1/2 can milk and american cheese. After mixed together I spread it out in a 9X13 pan topped with bread crumbs and added seasoning (bread crumbs are bland) pepper, little salt and a bit of dill and baked at 350 for 50 minutes. This is a keeper.

Peppermint Meringues

These were awesome. The only drawback is it takes up oven time and space for so long I can't leave or make anything else till these are completely cooled total of an hr after I turned the oven off. Everyone loved them.

Mom's Macaroni and Cheese

Springtime Spaghetti

I started it like others, carrots first and a little salt. Then added garlic and zucchini and dill weed seasoning. added half and half once veggies were soft with a hint of crisp to zucchini, personal preference. Once I drained my pasta, added it to sauce. Coupling with grilled salmon. Yum yum.

Bum's Lunch

I dislike cube steak, however this recipe made me think I could give it one more chance. It did not disappoint. I was pleasantly surprised and will most definitely be making it again. I used the butter, garlic powder, salt and pepper. Added potatoes and carrots with the onions. It does call for a punch of something, so next time I will use Lawrys salt and some worcestire sauce.

Sloppy Joes II

I used half a red onion, garlic, and browned a pound of hamburger meat, then I added a 28 oz can of diced tomatoes. Put that in my crock pot and added about 1/4 cup yellow mustard (eyeballed), about a tablespoon of brown sugar, then BBQ sauce to taste, and a hint of apple cider vinegar. Sorry, I don't measure. YUMMY.

To Die For Blueberry Muffins

I was really hoping from the reviews this would be better than I thought. As far the the height of the muffins, I would rank this a 5 for sure. I thought this to be a bland tasting muffin and I added cinnamon and nutmeg to the base. I would agree the topping made the muffin, and I only added brown sugar to the top, nothing else. Instead of milk I used almond milk. I think next time ill use applesauce in place of some of the oil, I just didn't have any around this time. I used frozen blueberries as I don't mind the coloring issue. I'll keep this one around and tweak as necessary because the height on these baby's is pretty amazing.

Creamy Hot Cocoa

This recipe is really, really good. It' will definitely help with those chocolate cravings and its creamy. I like this ALOT. What did I do differently, I used a dark cocoa, personal preference, I changed the sugar to just under 1/2 cup and its still pretty sweet. I also used almond milk instead of half and half and for my own personal taste, I added some cinnamon and a hint of cayenne pepper to the cup before I added the mixture from the stove. This is what cocoa is supposed to feel like :-)

Garden Fresh Tomato Soup

I have always enjoyed tomato soup as a kid. I still enjoy it to this day and my son has a real fondness for it as well. I am moving in the direction of less processed foods and so when I saw this recipe I was indeed hopeful. This soup did not disappoint. I had to use canned tomatoes, diced is all I had available. I sautéed the onion and garlic in a little olive oil, added the tomatoes, chicken stock, and cloves, as directed. Included a couple bay leaves and brought it all to a boil. I removed the bay leaves and cloves, Blended the tomato mixture in my vitamix and strained it through my mesh strainer. I made the roughe (sp) added the tomato liquid, some brown sugar, and a little basil. I added a little milk to my bowl and ladled in my soup. My son was very happy and so was I. I didn't think salt was necessary, plenty of flavor.

Absolutely Ultimate Potato Soup

I thought this was a great potato soup. Started everything at 5:15 & was ready by 7. I did make a couple alterations. I used Canadian bacon instead of bacon and i used 2% milk with Greek yogurt instead of heavy cream. I didn't have any tarragon so i used thyme. It was fabulous. I also added some frozen corn and peas.
