Garden Fresh Tomato Soup
I have always enjoyed tomato soup as a kid. I still enjoy it to this day and my son has a real fondness for it as well. I am moving in the direction of less processed foods and so when I saw this recipe I was indeed hopeful. This soup did not disappoint. I had to use canned tomatoes, diced is all I had available. I sautéed the onion and garlic in a little olive oil, added the tomatoes, chicken stock, and cloves, as directed. Included a couple bay leaves and brought it all to a boil. I removed the bay leaves and cloves, Blended the tomato mixture in my vitamix and strained it through my mesh strainer. I made the roughe (sp) added the tomato liquid, some brown sugar, and a little basil. I added a little milk to my bowl and ladled in my soup. My son was very happy and so was I. I didn't think salt was necessary, plenty of flavor.

Creamy Hot Cocoa
This recipe is really, really good. It' will definitely help with those chocolate cravings and its creamy. I like this ALOT. What did I do differently, I used a dark cocoa, personal preference, I changed the sugar to just under 1/2 cup and its still pretty sweet. I also used almond milk instead of half and half and for my own personal taste, I added some cinnamon and a hint of cayenne pepper to the cup before I added the mixture from the stove. This is what cocoa is supposed to feel like :-)

To Die For Blueberry Muffins
I was really hoping from the reviews this would be better than I thought. As far the the height of the muffins, I would rank this a 5 for sure. I thought this to be a bland tasting muffin and I added cinnamon and nutmeg to the base. I would agree the topping made the muffin, and I only added brown sugar to the top, nothing else. Instead of milk I used almond milk. I think next time ill use applesauce in place of some of the oil, I just didn't have any around this time. I used frozen blueberries as I don't mind the coloring issue. I'll keep this one around and tweak as necessary because the height on these baby's is pretty amazing.
