Roasted Butternut Squash and Garlic Lasagna

I thought this was a really good recipe. I followed the recipe almost to the "T". I made it as a main dish which I found to be my issue. It has good flavor but the taste and texture become a little monotonous as a main. I will make this again but it will be served as a side dish to a pork chop, perhaps.

Boudreaux's Zydeco Stomp Gumbo

I love this recipe. I've made it twice and I'm going to make it again this weekend. I do add a chopped green bell pepper and a few little chunks of okra. It is wonderful. Patience is the key to this dish. Get that roux nice and brown. It just adds more richness to the wonderful broth. Can't wait for tomorrow so I can make it and eat it. My husband is a huge fan of this dish.

Lemon Piccata Whitefish

I bought some ling cod at Costco yesterday and was looking for a simple, easy preparation and great flavor. This recipe fit the bill perfectly. I didn't have any parsley but everything else was done exactly as the recipe states. My husband and I couldn't stop talking about how great this is. Make it and make it NOW!

Pumpkin Pie Bars by EAGLE BRAND®

This is a fantastic recipe. My sister and I have managed to consume the entire batch in a couple of days. I added more spices than the recipe called for. I didn't have allspice so I added extra cinnamon, cloves and ginger. I will also add nutmeg when I make it again. It smells so good while it's baking. So much better than pumpkin pie. I used pecans for the nut addition-2 thumbs up on that. This is a keeper recipe!

Scalloped Potatoes and Onions

I can't believe how rich and decadent these taste without the usual cheese and milk. I told my sister about it and of course she wanted the recipe. She made them for her Christmas meal and her guests wanted the recipe. Don't hesitate to make these, you'll be glad you did.

Scalloped Potatoes and Onions

I'm very surprised at how well this turned out. It is a little on the bland side but the fact that it is so creamy without all the milk, cheese and gloppy soups I give it the full 5 stars. I'll make my own adjustments on the second round. I am shocked by the simplicity of this amazing dish. I'll be making this again.

Chicken Tinga Tostados

This is really, really good. I cut the recipe in half and followed the advice of others and used a ratio of 1 tomato, 1 chipotle to 1 chicken breast. For the onions I used 1 very large and 1 medium and it was enough for 3 large chicken breasts. It was absolutely delicious. I can't wait to have the leftovers for dinner tonight. I left the chicken in rather large chunks instead of shredding. I shredded some iceberg lettuce and thinly sliced radishes for a little side salad topped with salsa, sour cream and avocado. It was spicy but just the right kind of spicy. My husband calls it a keeper. It is really a 5 star recipe with the modifications. I do think a whole can of chipotle's would be way too much and I love spicy food.

Spinach and Cheese Stuffed Pasta Shells

I think this is a good recipe. It needs more than 3 1/2 cups of sauce though. I probably used 5 cups and it could have used a tad more. I didn't need all the pasta shells. I used about 26 instead of 32 which means I may have stuffed too much into each shell. I did add some grated mozzarella cheese on top which was really yummy. I will make this again and I loved the fennel seeds in the stuffing. It was quite a taste surprise when biting into one of those little gems.

Quick and Easy Brownies

It's true, they are quick and easy and delicious. I too cut back the flour to 1 1/4 cups and next I will cut down to 1 cup next time to make them more dense. I read where one reviewer added cinnamon and cayenne. I like that idea and will try it. Love these brownies.

Indian Tandoori Chicken

Really, really good! I used light sour cream instead of yogurt but everything else was followed exactly. Moist and tasty right off the grill. I will make this again and try it in the oven to see if it stays as moist as the grilled version.

Chocolate Chocolate Chip Cookies I

I will make these again and again. I used macadamia nuts, that was the only change that I made to this recipe. My husband was standing right next to me as the first pan came out of the oven. He couldn't stop "mmmmmmmmmmming".

Braised Collard Greens

My first time making collard greens and I'm so pleased with the results. I was at the farmer's market yesterday and I couldn't pass up the .50 per bunch of beautiful collards. I immediately came home and found this recipe. I had a couple of smoked pork bones in my freezer which I used instead of ham hocks and no salt pork. Everything else I followed in the recipe except that the greens really took over an hour to get tender but I did have a huge pot full. My husband kept telling me that he hated collard greens. After his first bite, "honey, your greens are really good".

Roasted Red Pepper Lasagna

This is an excellent recipe. I had some wonderful, fresh basil that I bought at the farmer's market the same day and I layered leaves of basil with the other ingredients. I will absolutely make this again. My husband and his friend also loved it. They arrived home about 10:30 from a band practice and they were starving. This was a perfect late night dinner. Tasty but not overfilling.

Creamy Potato Leek Soup II

I followed everything exactly as written with the exception that I used half and half. It was some of the best potato soup, I've ever eaten. I will be making it again and I'll use regular milk. I don't think the flavor will suffer at all by lightening up the milk. I was skeptical when I read that it only had 5 ingredients but I'm a believer now. Make this soup, you won't be sorry!

Crunchy Apple Salad

This was so good. I made half a recipe and brought it to work. All gone! I'm going to make the other half tonight. Only thing I did different was sprinkle the apples with lemon juice. This is going to be a keeper.

Korean Spicy Marinated Pork (Dae Ji Bool Gogi)

This was delicious. I didn't have the korean hot pepper paste. I used some other hot sauce on hand. I marinated 4 large pork chops with bone in for 24 hours and grilled them. All the dogs in the neighborhood were drooling with wagging tales. I will make this again.

Delicious Ham and Potato Soup

Just like all the other reviews, this soup is one of the best. I will be making this again. I didn't do exact measurements of the veggies or ham...just eyeballed them. The liquids were followed to the "T". Can't wait for my next meal of this delightful soup.

Roasted Beets and Sauteed Beet Greens

This was the first time I used the green part of the beets. Many times they don't look so healthy or edible. This past weekend, I visited the local farmer's market and they were healthy and fresh looking. WoW! I think I like the green part just as much or more than the actual beets. I used a little balsamic vinegar. I'm really happy that I tried this recipe and mine looked exactly like the picture. I'll be doing this again.
