This is really, really good. I cut the recipe in half and followed the advice of others and used a ratio of 1 tomato, 1 chipotle to 1 chicken breast. For the onions I used 1 very large and 1 medium and it was enough for 3 large chicken breasts. It was absolutely delicious. I can't wait to have the leftovers for dinner tonight. I left the chicken in rather large chunks instead of shredding. I shredded some iceberg lettuce and thinly sliced radishes for a little side salad topped with salsa, sour cream and avocado. It was spicy but just the right kind of spicy. My husband calls it a keeper. It is really a 5 star recipe with the modifications. I do think a whole can of chipotle's would be way too much and I love spicy food.
