I have always loved cooking and baking. Some of my friends call me Betty Crocker as I'm always cooking and sharing my bounty.
My favorite things to cook
I love to make a big one dish item during the weekend that will give my husband and I 2-3 meals during the work week so we don't have to race around after work and come up with an idea and then shop for the ingredients. Pork is our meat of choice so Chile Verde is a big winner, along with Chili, Minestrone soup or the Sicilian Sausage Soup from this site is awesome.
My favorite family cooking traditions
A potluck for any reason whatever. I have friends who ask what to bring and I always respond that a potluck is exactly that. Bring what you like but it better be good!
My cooking triumphs
I will try any recipe once even if I've never made it before. I always figure if it doesn't turn out right we can always order pizza.
My cooking tragedies
When I was about 9 years old, I asked my Mom if I could make oatmeal cookies and she agreed. I was in the kitchen and I had the oatmeal out on the counter rolling it to death with a rolling pen. My Mom asked what I was doing with a smile on her face and I replied that I was rolling the oats and when do you know they have been rolled enough.

Roasted Butternut Squash and Garlic Lasagna
I thought this was a really good recipe. I followed the recipe almost to the "T". I made it as a main dish which I found to be my issue. It has good flavor but the taste and texture become a little monotonous as a main. I will make this again but it will be served as a side dish to a pork chop, perhaps.

Boudreaux's Zydeco Stomp Gumbo
I love this recipe. I've made it twice and I'm going to make it again this weekend. I do add a chopped green bell pepper and a few little chunks of okra. It is wonderful. Patience is the key to this dish. Get that roux nice and brown. It just adds more richness to the wonderful broth. Can't wait for tomorrow so I can make it and eat it. My husband is a huge fan of this dish.

Lemon Piccata Whitefish
I bought some ling cod at Costco yesterday and was looking for a simple, easy preparation and great flavor. This recipe fit the bill perfectly. I didn't have any parsley but everything else was done exactly as the recipe states. My husband and I couldn't stop talking about how great this is. Make it and make it NOW!
