I have always loved cooking and baking. Some of my friends call me Betty Crocker as I'm always cooking and sharing my bounty.
My favorite things to cook
I love to make a big one dish item during the weekend that will give my husband and I 2-3 meals during the work week so we don't have to race around after work and come up with an idea and then shop for the ingredients. Pork is our meat of choice so Chile Verde is a big winner, along with Chili, Minestrone soup or the Sicilian Sausage Soup from this site is awesome.
My favorite family cooking traditions
A potluck for any reason whatever. I have friends who ask what to bring and I always respond that a potluck is exactly that. Bring what you like but it better be good!
My cooking triumphs
I will try any recipe once even if I've never made it before. I always figure if it doesn't turn out right we can always order pizza.
My cooking tragedies
When I was about 9 years old, I asked my Mom if I could make oatmeal cookies and she agreed. I was in the kitchen and I had the oatmeal out on the counter rolling it to death with a rolling pen. My Mom asked what I was doing with a smile on her face and I replied that I was rolling the oats and when do you know they have been rolled enough.

Shrimp, Sausage, and Fish Jambalaya
I followed the recipe almost exactly as written ( spices ramped up for my taste ). I used a dutch oven as noted by another reviewer. After the noted cooking time, I checked and it was sticking while the rice was still far from done. I added another cup of broth and checked that in 15 minutes. It was done but the texture was gummy. The flavor was excellent. My husband won't help finish it and I can't toss it. I'm going to freeze it in lunch sized portions for a lunch now and then.

Thai Ginger Chicken (Gai Pad King)
This is wonderful! My husband and I ate the entire dish but pushed back on the rice As we are trying to cut carbs. For the most part followed the recipe as written. I used extra garlic and Thai paste. We added extra hot sauce at the table. It's always great when you have the necessary ingredients on hand. I had it all except cilantro for garnish.

Maple Apple Crisp
This was really really delicious with a scoop of butter pecan ice cream. I followed it exactly. I might add a bit of cinnamon next time I make it.
