I made the following changes to this recipe- fresh mushrooms instead of canned, fresh spinach instead of frozen, and 2 TBSP butter instead of 1/2 cup. The flavor was very, very good. However, the entire lower half of the quiche was soggy. When we cut into it and removed slices of the quiche, liquid oozed out from the quiche that was still in the pan. Obviously the button crust was completely soggy. So, the flavor was great but it was so soggy and wet that I cannot give it a very high rating. I may have made a mistake by using the fresh ingredients so it might have been my own personal problem instead of a flaw in the recipe!
