Microwave Lemon Curd

Can't believe great lemon curd is this easy - but it is. Besure to take the white egg cord out before cooking. I ended up having to strain my to get them out. Microwave your lemons for 10 -20 seconds to get all the juice out of them. I doubled the recipe without issues. This is very tart/tangy. If you like it less so, the previous suggestion of an additional 1/4 cup sugar will fix it up. YUMMY!

Pizza Casserole

Excellent & Easy! Made a triple batch for our church potluck and they scraped the pan clean. Used cork screw noodles and extra sauce - YUMMO.

Apple Bars

Great recipe! I doubled it and with coaxing filled a sided cookie sheet. It is a "looser" cake, but full of flavor. I used pecans instead of walnuts...very yummy!

Alfredo Sauce

Awesome, fast & easy! I used 3/4 shredded bag Parm and it was great. Added shrimp, peas and used ramen noodles- voila! Dinner in 15 minutes! I'll never buy jarred sauce again.

Beef Barley Vegetable Soup

Made it for 50 people at work and WOW was it great! (One guy had 4 helpings!) Used italian style tomatoes, boxed beef broth, diced stew meat and canned green chilies for ease. 15 people asked for the recipe including my boss! Left overs are even better. Definite keeper and will make it again and again. Thanks Margo!!!!

Spinach and Strawberry Salad

Made this for a dinner party and I'm glad I made a double batch - WOW is this GREAT!!!. I used Splenda instead of sugar and bagged baby spinach leaves - otherwise followed the receipe - and it was fabulous. Took longer to stem and clean than to mix everything. New favorite at our house! YUM!
