Love to cook, Love Christ, and am blessed by wonderful family and friends in my life; all who are very willing guinney pigs! Cooking is my de-stressing activity. I use my skills to benefit my Church, potlucks at work, and catering when I'm asked. I'm a Food Network junky, always searching for something new to try.

Ham, Beans & Cornbread; comfort food at it's best.
My cooking triumphs
There have been many, but my favorite was my 1st try at beef wellington and one of my gourmet club guests who has traveled extensively throughout the world, declared it one of the best he'd ever had. I beamed for days! My drunken bucatini will have you singing Italian.
My cooking tragedies
Tapioca pudding at age 13. My Home Ec teacher kept preaching to be creative but never defined what that meant. I loved tapioca and thought double the pearls would be double good. The spoon literally stood straight up in the pot - it was like glue.....

Microwave Lemon Curd
Can't believe great lemon curd is this easy - but it is. Besure to take the white egg cord out before cooking. I ended up having to strain my to get them out. Microwave your lemons for 10 -20 seconds to get all the juice out of them. I doubled the recipe without issues. This is very tart/tangy. If you like it less so, the previous suggestion of an additional 1/4 cup sugar will fix it up. YUMMY!

Pizza Casserole
Excellent & Easy! Made a triple batch for our church potluck and they scraped the pan clean. Used cork screw noodles and extra sauce - YUMMO.
