Chili I
I am an avid cook, and love to try new recipes. When looking for a new chili recipe, this one appealed to me because it had over 1000 reviews and 18000 saves. As suggested by some earlier reviewers, i made the recipe exactly as per the instructions the first time (except that i used ground turkey and chopped chicken rather than beef). For peppers, i used a poblano, a jalapeno and a cubanelle. i made it one day in advance because the consensusa among prior reviewers was that the flavors melded better over time. This is one of the most delicious and richest chilis that i've ever had. Everyone loved it. I started a new batch tonight using leftover turkey from our Easter dinner. Not sure whether i'm going to try canned chipotle chilis or use a few poblanos. Either one would work and would add a different dimension to the chili- which i think is what i like the most about this chili, it provides a great base from which you can personalize to suit your family's tastes

Artichoke Chicken
This is an excellent recipes- works equally well for a weeknight dinner or for having friends over on the weekend. Based upon prior reviews, I was concerned about excess liquid, so I used frozen artichokes and let them defrost in a colla Der and then microwaved for 4 minutes. I alsosubstituted half of the mayonnaise with plain yogurt in order to reduce calories. Lastly, I added two cloves of garlic to the yogurt/mayonnaise mixture. We used boneless skinless chicken thighs and it came out great. Next time, I may just use yogurt and forgoe the mayonnaise altogether

Butternut Squash Pizzas with Rosemary
This is surprisingly delicious. Based upon prior reviews, I added blue cheese, cheddar cheese, a small amount of chopped pancetta that i had in the fridge, as well as a piece of leftover chicken. I used a trader Joe's herb pizza crust
