Doubly Decadent Dark Chocolate Cheesecake

Made this for my Anniversary and it was delish! I followed the recipe as written and it turned out great. I did find that it was a bit on the salty side and I think that had to do with the brand of Dark Choc. Chips I used which was not Nestle. Next time I will try Nestle Chips

Ricotta Cake

I made this exactly according to recipe and it cooked up properly and looked great. I think it turned out the way it was supposed to but I just did not think it was very good --- quite bland warm or cold. Also it is rather expensive with the 2lbs of ricotta and 7 eggs so it should be spectacular. I think I will stick with cakes that infuse cream cheese or sourcream like the "too much chocolate cake" recipe found on these forums.

S'more Brownies

Have made this a couple times now and it is a hit! Always goes fast -- Follow the recipe as is, no changes needed -- so simple ! I put a scoop of vanilla ice cream on top and cool whip - YUM

Chef John's Ham and Potato Soup

This was enjoyed last night. Turned out great -- I followed the recipe except I did not have cream so I used skim milk in place of water and whole milk in place of cream. Probably added a bit more skim than 2 cups ---- used about 12oz of ham and 3 pounds of potatoes. Tasted great with fresh cilantro added

Mexican Potato Nachos

This was enjoyed by the Family but they didn't rave about it. I think next time I think I will try to get more crispness to potatoes. I did slice in food processor to about 1/8 in thick --- half inch would have been too thick for my tastes. Thanks for the recipe and idea!

Slow-Cooker Chicken Tortilla Soup

Made this yesterday and it was HIT --- I started the recipe with the raw chicken in the crockpot in the evening with broth and water and spices on low and added the rest of items in early morning.... Around noon I was able to quickly and easily use two forks to pull apart chicken into shreds. Used drained 14oz can of corn instead of frozen and used 2 10oz cans of diced tomatoes and green chili peppers instead of separate can of tomatoes and separate can of green chilli peppers. Also added chopped celery.
