Good recipe. I added an extra tablespoon of sugar, and next time I think I'll even add another (so there are 4 tbsps altogether). Also, I'd add about a tsp of vanilla next time. Overall, pretty good!

Enchilada Sauce

The recipe is pretty good. I decided to leave out the chocolate, and I decreased the amount of chili powder to 3 tablespoons, which was still quite spicy. I also slightly reduced the amount of cinnamon. Next time I plan to try adding a bit of tomato sauce.

Banana Crumb Muffins

I changed this recipe just a bit. To the batter, I added the following: 1 tsp. vanilla extract, 3/4 tsp. cinnamon, 1/2 tsp. nutmeg (as other reviewers suggested), and also 1/8 tsp. of ground cloves. To the topping, I increased the cinnamon to 1/4 tsp and substituted oil for the butter. Next time, I think I'll add slightly more oil, perhaps another 2-3 tablespoons.

Harvest Pork Stew

"Pantry Raid" Chicken Enchilada Casserole

This recipe is delicious, though I made some slight changes and additions. First, instead of frying the chicken, I just popped a couple chicken breasts covered in foil into the oven at 375 F for about 35 mins, then shredded them. After that, I cut up a small green bell pepper and onion, sautéed them and added the chicken and the sauce mix. For the sauce, I omitted the chili powder as I used the Taco Seasoning I recipe from this site, which is quite spicy. To the sauce I added a can corn and a can of red kidney beans (instead of black, as they are not sold where I live). Also cannot find Jiffy mix here, so used a "fake-it" Jiffy mix from a blog called Fake-It Frugal. Had to bake it for about 40 mins altogether. I would definitely like to make this again!

Taco Seasoning I

I really quite like this recipe. I used 1/4 tsp of regular, as I didn't have ground sea salt ready. The only change I'll make next time is to decrease the black pepper to 1/4-1/2 tsp.

Southwest Chicken

I guess I used this recipe as more of a guide. I didn't have any chili peppers, but I did add about a teaspoon of chili powder to spice it up a bit, as well as a couple garlic cloves. I also am not able to find black beans where I live, so I replaced them with kidney beans. Served it with rice. Overall, it was very tasty!

No Roll Pie Crust II

The whole mixing process took about one minute. I have to admit, the thought that went through my mind was "this was too easy to taste good." But, it really is a wonderful crust! It's very flaky and I think I'll be using it from now on. As another reviewer suggested, I added 3 tbsps of sugar. Next time, I'll increase it to about 4 tbsps.
