Gnocchi I

I used a ricer for the potatoes. Added egg first, then flour based on a 2:1 ratio of potato to flour (based on weight), a little at a time. (Usually end up not using all the flour.) I'm still trying to learn the special rolling technique to get the "perfect sauce catching shape." My family loved it.

Apricot Cheese Loaf

This was delicious and easy!. I substituted golden and regular raisins, since I didn't have any dates. I increased the recipe by one half and baked it in a bundt cake pan. It took slightly under 1 hour to be done. The house smelled wonderful! It had more of a cake texture, but it was not overly sweet. The dried fruit balanced the "loaf" perfectly. I will be making this again, probably experimenting with different types of dried fruits.

Red Velvet Cake I

The first time I made this, I did double the chocolate as others had suggested. The red dye that I used was a gel and unfortunately this did not blend well and there were swirls in the cake. Aside from the dryness it tasted delicious. The second time I made it for Christmas Eve, I used a liquid red dye (2 oz)- no swirls and replaced the shortening with the 1 cup of oil that other reviewers had suggested. Beautiful. It was moist and delicious. The icing was a knockout both times. This is a keeper. Thanks for the recipe!

Red Lentil Curry

Have made this many times since finding the recipe. I hand't realized there were so many different kinds of curry paste. A delicious way to get my family to eat lentils.

Jay's Signature Pizza Crust

I use this recipe at least once a week for pizza. I choose to use OO flour from Italy. The recipe makes enough for 2 large super thin rectangular pizzas. It helps to actually take the temp of the water before adding the yeast to ensure good activation. I let the dough rise in a slightly warmed oven for one hour prior to rolling out.
