Acorn Squash with Apple

For health and safety, NEVER put plastic in the microwave. Study after study has shown that once heated, the plastic molecules will seep into the food and are cancer causing. I would highly recommend baking this recipe (and any recipe that includes plastic in the microwave) in a conventional oven.

Oven Fries

Olive oil instead of vegetable. Paprika instead of cayenne - and a good healthy amount. Optionally, rosemary. Also, substitute sweet potatoes for an alternative or throw in peeled pieces of carrots with the regular potatoes to try and get a few more vitamins in the mouths of those kids. So many variations!

Grandma Johnson's Scones

Perfect. And I'm really fussy. I did everything exactly as followed with the exception of cutting the sugar back to 1/3 c. (Next time I think I'll use only 1/4 c. sugar, as I don't want super sweet anything for breakfast - but this is a personal taste question.) I am throwing out all other scone recipes I have (there are many). From now on, this'll be my base for any number of variations. I can also recommend using spelt BAKING flour on this one. Terrific. These have just the right density vs lightness. Congratulations, Rob and Grandma. Job well done - and much appreciated.

Cinnamon Swirl Bread

Great, easy bread. I would highly recommend reducing the sugar to less than 1/4 c. sugar for the topping portion and 1/4 c. for the cake portion. With that amount of sugar, it was still quite sweet... next time I will STILL use less. Used brown sugar for the topping and lots more cinnamon.

Kentucky Biscuits

Perfect, absolutely sensational. I have thrown out my other biscuit recipes. In fact, I've started making these less because as soon as they're out of the oven, we become total gluttons and eat most everything on the plate. The key I believe is the cutting. Be sure to follow the directions there. I brush with cream before popping them in the oven - but this is really just a personal preference. Thanks so much.

Butternut Squash Risotto

This recipe is quite simply wonderful... and it's healthy. So often I find the top rated dishes loaded with fats and sugar - anyone can make those kinds of recipes taste great. This is creamy, stick to your ribs, fall goodness, with very little added fat. Prepare to be flexible with your stock. I needed an extra cup. You can tweak away and use this as a kind of starter. I can also envision a sweet version using apple juice instead of stock and loads of autumn spices.
