Fudge Brownies I

I was afraid of making homemade brownies because all the recipes I've seen always looked complicated and too many ingredients. Not this recipe. I had everything already except for the chocolate. They were simple to make and tasted delicious! My husband is a big brownie critic and he ate 3!! Needless to say, I will be making again. I did not use 4 eggs but 3. I think my only complaint is that it was a little too cakey but next time I will use only 2 eggs and see if it solves the problem. I also baked them in a 9x9 pan. We like them thick and a 9x13 would just be too thin. I baked an extra 7-8 minutes. **update** I think I have perfected this recipe. Only use 2 eggs and bake in a 9x9 pan for 30 minutes. I add abot a cup of semi sweet choc chips to the batter as well and it is WONDERFUL!! They turn out thick and fudgy, just the way brownies are supposed to be.

Juicy Fruit Salad

this was so delicious and so very easy!! I had all the ingredients at home already and it makes it easy to use up fruit that may go bad soon. I also added mandarin oranges instead of regular and I also added strawberries, blueberries and raspberries. I didn't add the banana until right before I served it. Excellent way to get your kids to eat a variety of fruit! Thanks!

Pepperoni Stromboli

this was pretty good. I think I didn't stuff it enough with the pepperoni and cheese. It was a little too much breading. I will try it again though and add more to it. I'm sure it will be better. My husband loved it though!

Cinnamon Bread Delight

This was actually a very good recipe!! I was a little skeptical b/c of the pudding mix, but my whole family loved it!! The one thing I did do different, is instead of doing 1/2 c. oil, I just did 1 c. of unsweetened applesauce and added a little more cinnamon. I made one loaf by itself and added raisins to the other. I think next time I will add some fresh chopped green apple!!

Urban Legend Chocolate Chip Cookies

These were pretty good for a choc chip recipe. I have been looking for a really good one, and decided to give this one a try. I don't have a food processor, so I put the oats in a blender and it made into a powder also. They were ok, but we could definitely taste the oats in it. I'm still looking for that 1 good recipe.

Quick Creamy Potato Soup

This was much better than the potato soup I made last year. My husband and my children loved it. I added about 1 1/2 cups of shredded cheddar cheese to the soup mixture while heating and sprinkled a little more on top of the bowls with some chopped green onions.

Libby's® Pumpkin Roll with Cream Cheese Filling

This was really good! I was so scared to make this b/c I've never rolled anything before. It was very simple. The only thing I think I did wrong was I prepared the filling while it was baking and just left it sitting out covered. It ended up being a little runny. I think if I would have put it in the refrigerator it would've spread alot easier. I didn't have a jelly roll pan but used a rectangle baking sheet instead. It came out great. Also used fat free cream cheese and libby's pumpkin pie filling (it has spices added to the pumokin) I will be making this to take for Thanksgiving.

Carrot Pineapple Cupcakes

I made these yesterday with some healthy substitutions! I used unsweetened applesauce for the oil, whole wheat pastry flour for regular flour, 1/2 c white, 1/2 c brown sugar, and added some allspice. They were so moist and delicious!! I also only used about 2 1/2 cups of confectioners sugar in the frosting.

Apple Breakfast Bread

I made this last night sort of as a dessert for my kids. I thought it was very good. I am very health conscious so I made this the "healthy" way. I substituted unsweetened applesauce for the butter, used egg substitute, did 1/2 white and 1/2 brown sugar, and used whole wheat flour instead of white. I also added about 1/2 c chopped pecans. I wanted to add raisins and dried cranberries as well but my kids didn't want it in there. I will definitely make it again and make more additions to it.

Stuffed Shells I

I used this as the foundation for my own recipe which turned out fantastic! I made w/ ricotta instead of cottage cheese and added about a tsp of minced garlic, italian seasonings, fresh parmesean, mozzarella, and provolone. I alos used egg beaters instead of the egg and maybe 1/4 tsp salt, little pepper. Oh and I can't forget that instead of spinach I mixed in about 1/2 c basil pesto. My kids absolutely loved it!! I had some refrigerated pizza crust so I rolled that out and topped w/ butter, seasonings, a little minced garlic and parmesean cheese as well and cut into strips when it was done for "homemade" breadsticks. It was really good! Enjoy!

Sticky Buns II

these were o.k., They didn't really look like sticky buns though. It was quick and easy to make but as others said, the dough was very hard to work with. It was too moist. I might try again and put a little more flour in it to firm it up. Slicing it was also very hard due to it being moist. The kids liked it though!!

Best Ever Cinnamon Pull Aparts

This recipe is so easy I just let my kids take over. They made this themselves for the family on Christmas morning. We do not use as many cans of biscuits though. I found 2 is plenty unless alot of people are eating.

German Apple Cake I

I made this cake for an office party we were having and it was a HUGE hit! I did however make some substitutions. First, I did not use 1 c of oil; instead I used 3/4 c unsweet applesauce & 1/4 c oil. Then, I did 1/2 white and 1/2 brown sugar and used whole wheat flour instead of all purpose. I did not put a glaze on it either since it was already sweet enough. I would have been too much. I will definitely make again!!

Actually Delicious Turkey Burgers

I pretty much use this same recipe in my turkey burgers, except I use seasoned salt and add basil. I love the flavor the basil gives!! I no longer use ground bef for burgers and even my kids prefer it this way!!

Beef Yakitori

I ended up marinating this for about 24 hours since I wasn't able to cook it when I wanted and it was awesome! My husband wanted it again the next night! Even all of my kids ate it and none of them are big on beef! I did use sesame oil instead of vegetable oil. I just love the flavor of the sesame oil better.

Snickerdoodles V

These were excellent! My kids ate them up that night as well as my husband and his friend. I've never tasted snickerdoodles before and I will make again. I thought it was just like a sugar cookie rolled in cinnamon and sugar! Either way, it was a hit in my house.
