Carrot Pineapple Cupcakes
I made these yesterday with some healthy substitutions! I used unsweetened applesauce for the oil, whole wheat pastry flour for regular flour, 1/2 c white, 1/2 c brown sugar, and added some allspice. They were so moist and delicious!! I also only used about 2 1/2 cups of confectioners sugar in the frosting.

German Apple Cake I
I made this cake for an office party we were having and it was a HUGE hit! I did however make some substitutions. First, I did not use 1 c of oil; instead I used 3/4 c unsweet applesauce & 1/4 c oil. Then, I did 1/2 white and 1/2 brown sugar and used whole wheat flour instead of all purpose. I did not put a glaze on it either since it was already sweet enough. I would have been too much. I will definitely make again!!

Apple Breakfast Bread
I made this last night sort of as a dessert for my kids. I thought it was very good. I am very health conscious so I made this the "healthy" way. I substituted unsweetened applesauce for the butter, used egg substitute, did 1/2 white and 1/2 brown sugar, and used whole wheat flour instead of white. I also added about 1/2 c chopped pecans. I wanted to add raisins and dried cranberries as well but my kids didn't want it in there. I will definitely make it again and make more additions to it.
