Cinnamon Sweet Potato Chips

I'd give these more stars if I could! I did the following to help ensure they turned out great: used a slicer to get a consistently thin chip, lined my pans with foil, used someone else's suggestion to melt the butter in a bag and shake the slices to easily coat them and then with the oven at 400, I made sure to flip them all over after 10 minutes and carefully watched them for those last 10 minutes, pulling out some of the browner ones as needed. When they came out of the oven, they crisped up so nicely as they continued to bake a little on the pans. LOVE, LOVE, LOVE this recipe!

Banana Bread VIII

This recipe is AWESOME. So easy, tastes delicious and never fails. I've been making it often as my house is for sale and it gets the house smelling just wonderful for people walking through. It's very adaptable too. I like to add a touch of cinnamon and vanilla to it and often substitue other fruits for the banana. This morning I used 1 banana, 1 peach and a 1/2 cup of shredded zuchinni and a handful of raisins. Yesterday it was 1 banana and 1 c of zuchinni. Before that it was all zuchinni and a 1/2 c pineapple and raisins. This recipe hasn't failed on me yet!

Red Skinned Potato Salad

Awesome!!! Can't get enough of this - just made a 4x batch for 50! Altered ever so slightly. Cubed the potatoes, tossed in a bag with olive oil, pepper, seasoned salt, paprika, garlic powder and dill weed. Roasted on a baking stone until tender. 1/2 mayo, 1/2 sour cream as so many have so wisely recommended, 1/2 the onion but added fresh chives to it. Only needed 1/2 the bacon for my tastes - but dear hubby put a handful of the leftover bits on his one serving! Added 1/2 the sauce to the potatoes when I made it so it could blend overnight but not get soggy and then the other 1/2 the next morning to freshen it up. Will use this recipe forever more - so much better than traditional potato salad!! To all those who mentioned it's a lot of prep work - all good homemade potato salad is, but with this one at least you don't have to do all that peeling! :)

No Sugar Raisin Cookies

Excellent recipe. I agree that there are too many raisins. I modify the recipe a bit by adding less raisins, more apple (chop it really small so it holds together better) and oatmeal and add a touch of cinnamon for flavor.

Mouth-Watering Stuffed Mushrooms

Awesome! Everyone raved about these. The cayenne really adds a kick. If you're doing these for a crowd not accustomed to spicy food, you'll probably want to cut the cayenne at least by half. Dipped mine in a mix of bread crumb and parmesan. Just couldn't get enough of them. Made a lot more than just 18-20 - I used 3 - 8oz packages of button mushrooms.

Split Pea Soup without Pork

Santa's Chocolate Thumbprint Cookies

Awesome! Melted some white candi-quik bars and spooned that into the middle of each and then had a variety of toppings pre-chopped (candy cane, almonds, pretzel bits, chocolate chips, sprinkles) and let my kids have a fun decorating party as they came out of the oven (transferred cookies to a cool sheet first so they wouldn't burn themselves on hot sheets). Turned out beautifully - quite festive with all the different topping combos the kids came up!

Soda Pretzels

Awesome recipe when the kids are dying to making pretzels and there's no yeast in the house. Had no buttermilk either so substituted plain yogurt. Awesome. Kids thought it was a little heavy on the wheat flour so I might switch the wheat/white ratio next time. Very, very good though as is in my opinion!

Cream Cheese Sugar Cookies

Very good taste but a bit on the heavy side for a sugar cookie. Followed someone's suggestion to use 2 1/4 "packed" cups of flour to make the dough a little easier to work with and had very good results. No icing needed to make these cookies taste good - my 2 yr old had a blast brushing them with egg white and pouring on the sprinkles and red-hot candies (we made them for Valentines Day).

General Tsao's Chicken

Excellent flavor - just like the take-out place down the road. Would give this 5 stars except that the sauce is just too thick. Shame on me for not reading these reviews before I made it. Will make this again very soon to try it out with less starch. I didn't add the chiles and it was still great.

Tom Ka Gai (Coconut Chicken Soup)

A good substitute when you just can't get out to a Thai restaurant for the real thing. Be sure to add mushrooms. Works fine without lemongrass and substituting lemon for lime juice. Add a touch of sugar, too.

Old-Fashioned Vegetable Soup

Awesome! Used sodium-free chicken broth and low-sodium soy sauce, added a dash of cayenne, and couldn't have been happier with the results. Perfect for a cold winter day and very healthy too!
