Beef Wellington

Made this for my loves--BF and two teens for Valentine's day. They thought it was something super special. The pate makes a huge difference don't skip it even if you have to buy it canned (which i did). The packets were so pretty before and after you cut into them. I was so proud of my presentation that I facebooked the pics :)

Green Beans with Almonds and Caramelized Shallots

This is very similar to something my mom used to make. You don't need 2 TBS of sugar if your shallots are fresh. And you can substitute a nice sweet onion like vidalia instead of shallots and it is still very nice. my kids love anything with caramelized onion on it.

Nutty Coconut Fish

This was way too salty for my whole family. I do tend to cook low salt for health reasons. I did measure. So next time we will cut the salt in half.

Sweet 'n' Hot Glazed Salmon

The glaze was very good, a little spicy for my preteen daughter but the rest of us loved it. My only trouble was getting the salmon to cook evenly, next time I will put on two separate baking dishes, one with thicker pieces, one with the thinner fillets.

Shrimp Creole III

I loved this, my kids loved it, my BF thought it was good but not great. I couldn't get him to pin point why. This is a very healthy dish. Use low salt tomatoes and cut the olive oil a little and your cardiologist will be so proud.
