The Best Thai Coconut Soup

YUMMY in my tummy!! It definitely reminded me of my favorite Thai restaurant's coconut soup. This really is a good recipe and I didn't even have all the ingredients and it was still delicious. I used shrimp paste instead of curry paste, I didn't have lemongrass so I settled for lemon juice and I used green onions instead of the cilantro. Next time I will get all the ingredients, because I know it will probably be even better. This one is a keeper!

Big Soft Ginger Cookies

All I can say is WOOOOOOW!!! These cookies are D-E-LICIOUS. I made these for my friends at small group and the girls loved it!! All the cookies were gone within 30 minutes(no joke). They are soft and moist and just plan good. One of my friend's who is a baker could not stop talking about them and asked for the recipe. Only thing I would say is that I made these once with butter and the another time with margarine. The cookies taste a little better with the extra buttery flavor from the margarine, but are much more sticky and were not as pretty as the batch with all butter. I might do as someone else did and use 1/2 cup butter 1/4 cup margarine. All in all these cookies are the bomb diggidity!!

MMMMM... Brownies

AMAZING!!! I am telling you, these brownies came out perfect and beautiful. These brownies had me thinking I was the next Betty Crocker! They are moist and chewy, just like I like my brownies to be. The only thing I tweaked was I added about 2 Tbs of cocoa powder and used a 9x9 pan. I think next time I will do half brown sugar and half white sugar. So in the future there will be no more brownies mixes for this chick!!!

Buttermilk Pound Cake II

YEEESS!! This cake is great!! Only thing I changed was using almond extract instead of lemon extract and I used the old mix vinegar and milk trick to get the effect of buttermilk. As a true pound cake it tastes better the next day. I had to stop myself from going back for more last night. Great recipe thanks Cathy!
