Hudson's Baked Tilapia with Dill Sauce

One of the best fish dishes I've ever had. Instead of Cajun seasoning, I used Old Bay seasoning. Delish. My husband, who typically dislikes fish, thoroughly enjoyed this dish. I served this with brown rice and asparagus.

Slow Cooker Chicken and Dumplings

My husband doesn't comment much on my cooking other than "thanks." Today, after a few bites, he exclaimed, "Wow! This is really good!" I love how it's so easy to dump the ingredients into the slow cooker, turn it on, go to work, come back, and it's ready. Some modifications I would make for next time -- 1) I cut the Pillsbury Grand Flaky Layer biscuits into quarters this time. Next time I will cut them into smaller pieces because the puff up so much. And if I have time, I would just roll them into little balls. 2) You definitely need at least 90 minutes to cook the dough through on high heat. Next time, I would go 2 hours. 3) I added celery, mushrooms, and white corn -- family like the veggies. I definitely would add some additional vegetables, like carrots and peas. They don't make the soup watery at all. 4) Be liberal with adding the liquid. I used chicken broth, thinking I added way too much after reading reviews. The soup came out PERFECTLY, not watery at all, even with the vegatables. I think I used at least 20 oz of liquid. Use low-sodium chicken broth to cut the sodium level in the dish (doesn't affect flavor at all). 5) I don't think you need much seasoning to this dish, although if you appreciate spices, it would blend nicely with the soup. I just added black pepper when I served it. Thanks for the great recipe. Definitely a keeper.

Barbecue Beef Cups

My family enjoyed this recipe. My two-year old took a bite and said, "mmm... good..." :) We had to bake it a little longer than 15 minutes, but it came out perfectly golden brown. In the future, I'd like to try it with more veggies mixed in and a more tomato-y sauce. We used the Grand flakey biscuits and they came out fine. I do wonder though, if I could use just half of a biscuit as a shell -- will it still hold up? I'll try next time and post my results.

Slow Cooker Chicken Taco Soup

Excellent. Followed a few other reviewers suggestions, like substituting the beer with chicken broth, adding a bit more spices (a shake or two of chili powder, cumin, garlic powder). Perfect amount of flavor. It was little watery right out of the crockpot, but thickened up nicely with sour cream. Also, the day after as leftovers, it was perfect! I'm a big cilantro fan and thought it might go well with this as an optional garnish, but for some reason, it didn't really mesh well with the soup.

Buttercream Frosting

I've never made homemade frosting before, so that may have affected the outcome of this recipe. I studied many reviews and heeded advice, but my frosting still came out too loose and too, too sweet. Someone mentioned adding more sugar to stiffen up the frosting... that won't do -- I did and of course it made it sweeter. Is there any else I could try next time to make the frosting a lot less sweeter but stiffer? (I don't like the idea of shortening in my frosting...)

Chocolate Cherry Cupcakes

I love the combination of cherry and chocolate, and I could see the potential in this recipe. However, I was a little frustrated that about 1/3 of the cupcakes were sagging a bit because the cherries had dropped to the bottom. I had spooned in a tsp of filling, which was about 2 cherries. I'm thinking that the cherries were too heavy. So next time, maybe if I spooned one cherry and half a tsp of filling sauce, it won't sink. I will try this recipe again.

Corn Dip II

I would give this 4 1/2 stars if I had the option. I first tried the dip cold. Not very impressed. It was good, but not GOOOOOOOD. But heeding to the advice of others, I heated the dip up in the oven... OMG... sooooo much better! I'm addicted!

Sweet Potato Souffle I

Definite 5 stars. Followed people's advice about cutting the sugar down to 1/2 cup. I added cinnamon, nutmeg and ground ginger. I've made it twice already -- once yesterday and once today -- both for a group of people. Gone in a flash.

Peach Cobbler II

This didn't turn out too bad, just okay. I always thoughts that cobblers were supposed to have a flaky crust. This was more like eating peach cake. I felt that that batter was a little too floury for my taste. I took everyone's advice and cut back on the sugar and water. Flavor of the peaches was good, appearance and texture of the cobbler good. I just didn't like the cakiness.

Slow Cooker Beef Stroganoff I

My hubby and I enjoyed this dish, though we found it a little on the bland side. Still satisfied with the meal, so I'll give this 4-stars. I added 2 cloves of mince garlic and a can of sliced mushrooms (fresh would have been better). I think next time, to add some more flavor, I'll add onion soup mix, like others had suggested.

Hoisin Beef with Shiitake Mushroom Sauce

I noticed how many people mentioned the sauce being too liquid-y, so I dissolved some cornstarch (half tsp) into a bit of hot water and added it to the sauce. As I tasted the sauce, I found it quite bland -- not enough marinade was leftover to add to the mushroom juice. I had to add a tablespoon more of hoisin to the sauce. The sauce then turned out quite nicely. I was a bit disappointed with the beef. It marinated for several hours but didn't seem to pick up the flavor of the marinade. My husband and I both felt like something was lacking... maybe adding a splash of soy sauce to the marinade might help? If I were to try this recipe again, I'd also pick a cheaper cut of beef rather than tenderloin (filet mignon) -- the texture seemed a little odd to us because it was so soft and flavorless.

Garlic Chicken

Very good. I followed others' advice and cut the chicken into strips. It baked very well. Even though I didn't do it this time, I think mixing the breading with panko breadcrumbs would be a good idea. Delicious!

Hawaiian Spareribs

I had high hopes for this dish, but I was somewhat disappointed. When the ribs were done, the sauce did not stick to the ribs and everything appeared quite liquidy. I'm trying to figure out what I did wrong. Will try this again to see if I can work this recipe out.

Slow Cooker Beef Stew IV

I followed some suggestions and changed the water to beef broth. Added celery and used bay leaf and crushed red pepper. Also added worchestershire sauce. But it still turned out bland! It smelled great while cooking and the meat & potatoes turned out great. But it wasn't as tasty as I had hoped it to be.

Saltine Toffee Cookies

This is fantastic. Can't believe saltines are used in this recipe-- how fun! :) My hubby likes this a lot, but he says he'd prefer it to be made with milk chocolate instead of the semi-sweet chocolate I used.

Cocktail Meatballs

A little too sweet for my taste. I would omit the brown sugar, as adviced by others. I might add a little more spice with hot sauce. Others, however,seem to really love the meatballs.
