BBQ Pork for Sandwiches

DELICIOUS!! My crockpot was buried in a cabinet, so I made a few adjustments. I used about 3 1/2 lbs of boneless ribs. In a pot, I added the ribs, 3/4 can of low sodium beef broth, 3/4 can of beer, garlic powder, onion powder and black pepper. I let it cook (covered) low and slow in the oven - about 3 hours at 250 degrees. I pulled the pork apart with two forks (soooo tender), drained about 1/2 the liquid and added about 2 bottles of BBQ sauce (1 Jack Daniels & 1 Cattleman's - it's what I had on hand). I stuck it back in the oven at 325 degrees for 30 minutes. My husband and teenage son couldn't get enough! Still have a ton left over and hope it freezes well for another meal!

Taco Dip I

I substitute the sour cream with small curd cottage cheese (know it sounds wierd, and I hate cottage cheese, but it makes the base a little thicker and it works!). I skip the lettuce and drizzle the top with taco sauce (not salsa). It's ALWAYS a hit!!

Rosemary Ranch Chicken Kabobs

I prepared this recipe on Monday morning - planning on grilling the chicken that evening (didn't "kabob" it - left the boneless chicken breasts whole). My son's baseball game ran late, so we ended up having take-out instead. The following day I figured I'd try grilling it - hoping that the chicken wouldn't be too "seasoned". It was, by far, the tastiest, moistest chicken I've ever grilled. Will make this again and again and again.....

Asparagus Appetizers

I've made this many times and they were a hit! I usually add a little garlic powder to the cheese mixture, skip the egg and baste it in butter just before cooking.

Grilled Asparagus

Asparagus is my VERY favorite vegetable. Have you tried baking or grilling it with Lemon Pepper (the kind with salt added)and olive oil? It's AMAZING! I usually "nuke" a bunch for 2 minutes in a tiny bit of water and add the olive oil and lemon pepper while it's hot. I let it marinate for at least a half hour before grilling or baking it. Try it - it's wonderful!
