Mum's Irish Apple Pie

Wow! I've made apple pie in the past with very little luck at making a really good dessert. This one was just perfect! My guests raved about it! They were so impressed at its sweetness that they compared it to other homemade pies made with tart apples, saying that mine was the sweetest ever (and I made this pie with Granny Smith apples)! I loved how simple this pie was to make, and I will definitely repeat it from now on! I may make just one change to the original recipe and stir the filling together before placing it in the crust to create more of a sauce, but that would be my only change if I tried it. This was just right for St. Patrick's Day!

Natalie's Amazing Irish Mashed Potatoes

Love this recipe! My guests for St. Patrick's Day loved this as well! I only made one change to the original recipe- I substituted minced garlic for the garlic powder. This potatoes were easy and so creamy! I've tried other mashed potato recipes in the past that guests liked, but this takes the cake! This recipe will be the only one I use from now on!

Guinness® Corned Beef

I have done a different Guinness corned beef recipe for the past five years, and everyone has always liked it. But this year, I couldn't find my recipe so I used this one (thinking it was the same). It wasn't the same as my original recipe; this one is MUCH better! The brown sugar gives the beef a fantastic glaze/crust that makes this meal so much more! It was so easy to make, too! I left it in my crockpot for four hours (only did a 2 lb. brisket), and it was perfect! My old recipe will never be used again. This one, however, will always be my corned beef recipe!

Amazingly Easy Irish Soda Bread

I have successfully made a lot of breads over the years. But this one did not turn out at all, even though I followed the directions to the letter. First, it was very dry and crumbly, and it refused to stay together. Next, when I finally did get it to form into a dough and started baking it, I found that the outside burned while the inside was raw...and I do mean raw. I even tried to cook it an additional 20 mins when I discovered it was still raw dough in the center, and that didn't work. Sadly, this recipe will never be attempted again. So not easy to do!

Country Apple Dumplings

I made this on a whim, and it was great! The only flaw to this was that it was very soupy when I pulled it from the oven. I used 12 oz. of Sprite instead of Mountain Dew (I had it left from another recipe that called for it). Next time, I think I will cut it down to 6 oz or less. Overall, it was a good dessert that I look forward to trying again.

King Cake

I had never had King Cake before, but I wanted to make this for Mardi Gras to take to work. I used this recipe, and it was wonderful! My coworkers loved it! I had one coworker from New Orleans who raved that this was just like the King Cake from the Big Easy, and the Cakes (I made 2) went fast! I did make a few adjustments based on reviews and taste. I accidentally did 2 c. of confectioner's sugar to the filling, so I balanced it out with a couple of Tbsp. of lemon juice (gave it a great taste!). I also spread the filling on the dough and rolled it like a jelly roll instead. The lemon and cream cheese was just right, and it balanced the cake perfectly! My only concern with it was that it was very dense and a the bottom burned a little. But overall, it will definitely become a Mardi Gras staple for me!

Easy Meatloaf

I am not a huge fan of ground beef, but I wanted something similar to my grandmother's meatloaf. This recipe was it! My boyfriend and I LOVED the meatloaf, and it has been repeated several times since I discovered this recipe a couple of months ago! It's very easy to put together, and the results always come out the same: perfect! I do add a couple tsps of Worcestershire sauce when I make this because we like the taste of it, and I always double the sauce recipe for spreading on at the end. I also take leftovers, and everyone at work has told me that the smell of this after reheated in the microwave is delicious! They have all asked me for the recipe! This one has already been a go-to recipe for me, and it will continue to be one!

Cindy's Jambalaya

I've never really had Jambalaya before, but I decided to try this out for Mardi Gras this year. It was fantastic! I followed the advice of a couple of reviewers, and I used converted rice for the texture, which was sound advice as it held very well and did not get soggy nor did it clump together in the end. I also used fresh thyme and added a little fresh rosemary that I had left from another recipe. It came out just right, and it was so easy to throw together that I will definitely make this again! My boyfriend, a picky eater, even got up in the middle of the night to have another bowl! The only problem I had was that I used a spicy pork sausage (I like spice) and it was almost too spicy. But, that was my mistake and not from the recipe. But this recipe is definitely a keeper!

Amazing Pork Tenderloin in the Slow Cooker

I have a picky eater (my boyfriend) that loved this recipe as much as I did! It was perfect! I used a pork tenderloin (1.92 lb) and a Malbec wine, and it cooked on low in four hours with no problems! I did make a few adjustments based on some reviews. I didn't use onion soup mix. Instead, I used a sliced red onion, fresh thyme, fresh rosemary, and 1/2 tsp of coarse sea salt. I also substituted the soy sauce with Worcestershire sauce. I also added a few whole garlic cloves into the meat while it cooked for extra flavor, as well as the minced garlic on top. This is a recipe we will definitely repeat!
