Sweet Potato Casserole II

I forgot the vanilla (oops!) but this dish was still more than delicious. It's very light and the topping makes it really special. Everyone loved it. This has replaced my old "candied yams with marshmallows on top" for all holiday meals. Thanks for this winner of a recipe!

Award Winning Soft Chocolate Chip Cookies

These cookies definitely taste good (I added pecans to mine) but I wasn't thrilled with the texture the pudding added. They were too light and cakelike-- not chewy. I'll stick to Toll House.

Creme Brulee French Toast

Very, very nice for special occasion/holiday breakfast or brunch. I used challah instead of French bread and Grand Marnier rather than "orange brandy." It was delicious.

Chocolate Pecan Pie III

This is excellent pie. I normally find pecan pie (and any chocolate varieties) far too sweet for more than a sliver, but this recipe makes a delicious chocolate pecan pie. The filling has a gooey, fudgy consistency and tastes incredible. My husband (a chocoholic) said this is the best pecan pie he's had. I used 1 stick of butter instead of margarine and used a refrigerated ready-made pie crust. Simple and delicious!

Burrito Pie

The whole family enjoyed this dish. I substituted jarred salsa + a sm. can of tomato sauce for the taco sauce and used a combo of Colby and Monterey Jack cheeses. It came out great. I served it over chopped lettuce with a dollop of hot salsa on top. A winner!

Sweet and Sour Chicken III

I didn't love this, but I will probably make it again, with some minor changes. I sauteed some onion with the chicken, skipped the peppers (kids won't eat, though you will sacrifice color if you do)and added a bit of ketchup (2-3 T) to the sauce to give it the orangey color of restaurant S&S Chicken and a bit more flavor. A quick meal, and my kids (4 and 2) did enjoy this.

Pineapple Cranberry Chicken

This is a very easy dish. My children loved the fruity flavor, and it tasted nice with buttery basmati rice as a side dish. Next time, I will add a bit of chicken broth to warm up the sauce a bit.
