Melissa's Turkey Meatloaf

I cut the recipe down to 4 servings because I only had a pound of turkey, added another egg and dropped the milk, and crushed and added 6 buttery crackers plus a little poultry seasoning. DELISH!!! * I also didn't have the soup so I mixed ketchup with some brown sugar.

Tasteful Tahini Salad Dressing

Healthier Chuck's Favorite Mac and Cheese

This totally satisfied our craving for mac and cheese! I sprinkled in a few drops of liquid smoke and shook in some powdered mustard, omitted the butter and used less crumbs. Next time I'll toss the cheese mix into the food processor for a more uniform look (no need to see chunks of cottage cheese in the final product) ~Thanks Chuck, this one's a keeper!!!

Pork Tenderloin Diablo

Next time I either won't salt the meat before browning or I'll use low salt broth. I used fat free half and half (had it on hand) and sprinkled in a tiny bit of flour to thicken. Used half the butter. I will make this AGAIN and AGAIN!!! Thank you, chef John :)

Easy Spinach Souffle

I sauteed a 10oz bag of fresh spinach with garlic, and doubled the 'sauce' ingredients. YUM!! Next time we'll have the lower fat version, just to eat healthier.

Enchiladas

I only had a pound of ground turkey so I cut the recipe in half. (I still came out with 11 corn tortillas, enough to fill a 9 X 13.) I added 3 cloves of crushed garlic, taco seasoning and a small can of green chiles. I also poured half a can of green chile enchilada sauce into the meat mixture and poured the rest into the bottom of the casserole dish and over the enchiladas. VERY TASTY!!!

Tandoori Fish

Oh boy, this is YUMMY!! Must love heat, FYI. If not cut way back on the cayenne. This is one recipe I didn't mess with and It was great. I'm looking forward to the leftovers all ready! We had the fish over brown rice with mango slices and a green salad. This recipe is a keeper! Thanks! Next time I think I might add some coconut milk...

Western Omelet Sandwich

I did an ingredient search and came up with this sandwich. My mom used to make these for us!! I didn't have ham so I used 3 strips of bacon. (halved the recipe) I put ketchup on one side of my toast and mayo on the other, it was a party in my mouth, YAY!

Bean Soup

My mom grew up in WV and this recipe is authentic. Make sure to rinse the beans after they soak! Don't add the salt 'til the end, you may not want it. I used 4 cups no salt added chicken stock and 3 cups water. You *have* to serve this soup with cornbread (I bake mine in a cast iron skillet), and you can use ham hocks if you don't have a bone. :) Don't forget to mash some soup up against the side of the pot.

Italian Sausage Soup

Excellent! I used beef stock because I had it, added a chopped leek and used turkey sausage plus a chopped hot pepper also added another clove of garlic, some celery flakes and a couple shakes of basil, MMMmmmm. It would be good with a little cooked macaroni tossed in at the end, too. Will make this again and again, Thanks!!

African Curry

To tenderize the chicken I marinated it in fat free plain yogurt with tumeric and garlic stirred in for a couple hours, then I browned it before adding to the onion mix. I was out of curry, so I mixed my own African curry powder: 1 1/2 teaspoons ground ginger 1 1/2 teaspoons dried garlic 1 tablespoon ground coriander 1 tablespoon ground cumin 1 tablespoon ground turmeric 1/2 teaspoon cayenne 1/2 teaspoon hot chili powder. I doubled the recipe and only used 1 can of coconut, kicked the curry to at least double, added a bit more cayenne pepper and cumin. YUM! *I added thin sliced red potato, red pepper and green peas to the onion at the end, too. Forget about the lemon, you don't need it!

Baked Spaghetti Squash with Beef and Veggies

This was yummy. I doubled the basil and oregano, and added 1/4 t cayenne. I think next time I might add a liitle hot chicken sausage. * Bake the squash, it's worth the time you save microwaving (as some have done) in better flavor.

Spicy Pumpkin and Sweet Potato Soup

Way to go, Simon!! This soup was awesome.!! I added a bit more cumin and a couple shakes of curry, plus some sauteed hot Italian sausage (chicken, not pork) and used canned pumpkin instead. I'm going to have some tomorrow for lunch, 3rd day in a row which is saying ALOT about the soup.
