Juicy Roasted Chicken

Reviewed: Sep. 16, 2008
This chicken was sooo juicy that I thought I didn't cook it long enough. I didn't change a thing except I put the butter under the skin instead of on top of it. I also made pan gravy from the dripping and it was wonderful.

Creamy Chicken Pasta

Reviewed: Sep. 11, 2008
This was quite bland the way the recipe is. I sautéed the chicken in EVOO instead of boiling and used cream of chicken soup instead. I wish I would have used two cans, cause it wasn't as creamy as I had hoped. This is a good jumping off recipe, but it definitely needs to be tweaked.

Homesteader Cornbread

Reviewed: Sep. 11, 2008
The whole family eats this cornbread up. The kids love it, but it could be because of the amount of sugar in it. Very good and moist.

St. Louis Toasted Ravioli

Reviewed: Sep. 5, 2007
THANK YOU! I lived in St.Louis for awhile and I always got the Toasted Ravioli when we went out, and these are fabulous. Only difference is I use the meat filled ravioli.

Baked Ziti I

Reviewed: Sep. 5, 2007
Very Good! My son thinks it's lasagna...whatever makes him eat! Thanks for the recipe. ***UPDATE*** I made this for a luncheon at work and put it in the crock pot. I cooked everything the night before but didn't mix the noodles with the sauce and cheese. I layered it in the crock pot in the morning, turned it on high for the first hour and then down to low and by lunchtime...it was gone! There are never any leftovers!

Ham and Fresh Basil Pinwheels

Reviewed: Sep. 5, 2007
These are good and versatile. A little time consuming, but worth it. I make these for parties or long weekends so we can munch throughout the day with ease. The flavored cream cheese spreads are good to use with this recipe too. Thanks!

Excellent potato salad! Better than my mom's..shhhhh! Love the addition of the bacon and using red potatoes with the skin on. Very easy and delicious! Made the summer BBQ's complete.

Sausage Stuffed Mushrooms II

Reviewed: Sep. 5, 2007
Very Good...didn't give 5 stars because of the changes I made. I made quite a few and used the smaller bite size mushrooms, 1 lb Ground Hot Italian Sausage and mixed with the 8oz Cream Cheese...the consistency was perfect that way. Seems like it would be too much cream cheese by the recipe. I also chopped some stems and added to the sausage mixture then sprinkled parmesan cheese on top and baked at 400 for about 10 minutes.

Smothered Green Beans

Reviewed: Sep. 5, 2007
These are the tastiest green beans...my hubby loves them as well as my 2 picky eating boys. I did add a little extra water and let them simmer awhile longer...just because we had other stuff going on.

Restaurant-Style Potato Skins

Reviewed: Sep. 4, 2007
These are Excellent!!! Pretty fast considering it is 3 steps, but WELL worth it and frying does make a difference. Only thing extra I added were green onions and baked for 7-10 minutes at 375. You can also freeze these after the frying process to have a quick go to appetizer.

Grilled Corn on the Cob

Reviewed: Jun. 2, 2007
I don't know why there are so many negative responses due to the removal of the husks, since the recipe does not call for that. It is delicious and a great recipe on the grill and you can adjust the seasonings to your taste. Thanks.

Seven Layer Dip II

Reviewed: Aug. 2, 2006
LOVE this dip! It is always a big hit and never any left over! We like it spicy, so I use "Hot" Taco Seasoning and spice up the guacamole a bit. After initial review and several dips later we tried throwing the left overs on chicken fajitas and it was AWESOME!

Healing Cabbage Soup

Reviewed: Aug. 1, 2005
So simple and delicious. Didn't have Italian stewed tomatoes, so used regular diced tomatoes and added Italian seasoning. Family loved, even the little ones and my husband said he hated cabbage until I made this. Thanks.

Bob's Stuffed Banana Peppers

Reviewed: Apr. 21, 2005
This was mouthwatering. I only used one package of italian sausage and one can of the crushed tomatoes. This made a lot even with the one package of sausage, so I cooked what was left of the stuffing, added the other can of tomato sauce and seasoned it up to make a nice spaghetti sauce that I served on the side with pasta. It was fabulous! Thank you!
