Easiest Peanut Butter Fudge

Awesome PB fudge! After reading the reviews I made a few alterations. I reduced the brown sugar to 2 cups, increased the PB to 1 cup, and made sure I whisked the melted butter, brown sugar & milk until very, very smooth. When making fudge (I have asked Santa for a candy therometer this year) I tend to error on the side of caution and boil for half a minute or a minute less than stated, and never above medium-low (4 on my stove).

Sesame Shrimp Stir-Fry

The five stars goes to the resulting sauce! My 'personal touches' included: using fresh ginger, canola oil instead of sesame oil in the wok, soya sauce & honey instead of teriyaki sauce (I don't usually have it on hand), vegetable broth instead of chicken, and my own usual stir fry veges mix. It wasn't too spicy for my kids (5 & 2) either.

Ranch-Style Buttermilk Dressing

Quick, simple, and tasty. I followed the ingredients exactly as listed with one exception, I used seasoning salt as opposed to white salt. I will definitely be making this again.

Easy Pineapple Cake

An easy, delicious, and quick dessert or treat. I halved the recipe, followed the mixing directions exactly, put it in an eight inch round pan, and baked at 350 for 35 minutes. Next time I would drizzle the icing over the warm cake as opposed to actually icing it.

Lemon Pudding Cake II

A nice change from the usual baked cake & pudding recipes - caramel, chocolate, rhubarb, etc... It was full of flavour (I did use the zest of an entire lemon & fresh squeezed juice) and was very light. I topped it off with fresh raspberries and whipped cream...delicious!

Buttermilk Pancakes I

Without a doubt, this recipe is much better than any premixed packaged concoction I have ever tried (and even most homemade varieties too). Light and fluffy, excellent with whipped cream and fresh berries.

Quick Szechwan Sauce

Simple enough to modify for ingredients you have on hand (ex. 3 tbsp red crushed chilies, 1 tsp ginger powder, 1 clove crushed garlic) and to change (ex. 3 tbsp of sugar) depending on your family's taste. Will definetly make again.

Maple Apple Crisp

A great & simple recipe (easy to remember too). The maple syrup is a nice change from the standard cinnamon/nutmeg flavor of most apple crisp recipes. That said, I didn't use the suggested 3/4 cup of maple syrup. Instead I drizzled maybe 1/2 cup on the sliced apples and discarded what was left on the bottom of the bowl.

Quick and Easy Alfredo Sauce

This recipe is just as easy as a packet and tastes better, courtesy of no added preservatives. My husband did suggest adding a bit more pepper next time.

Simple White Cake

Like many white cakes, this cake is dense but it is quite good. I did sift the flour, beat the sugar & butter until quite light, and added a tiny bit more (an ounce) milk. Everyone enjoyed it and my husband asked for it for his birthday next month. This recipe is definetly a keeper!

Chewy Peanut Butter Chocolate Chip Cookies

Batch #1 was good. Batch #2 was the best batch of cookies I have ever made. The second time around I mixed the margerine, pb, sugars, eggs, syrup, water & vanilla until it was very smooth and light, and limited the flour to 2 cups. Awesome recipe!
