Whole Wheat Blueberry Muffins

These muffins are fantastic! All I had on hand was green apple applesauce, which is quite tart, but they were still good. I used organic sugar, sea salt, and almond milk. I also personalized this recipe by adding close to a teaspoon of almond extract to the batter. Really, really good!

Homemade Mac and Cheese Casserole

This seemed like a lot more work than it was worth. You've got the oven on, pasta boiling on one burner, milk and flour and the cheeses trying to burn up on the other burner, and melted butter shooting all over your microwave--all for this one SIDE DISH. I made a double batch so I could share with a friend and their family seemed to like it. I was just happy my husband was doing the chicken in the smoker because no other food could be prepared in my kitchen while this was being made.

Easy Toffee Bars

I've eaten this before and it looked and tasted amazing! This recipe just didn't work. The butter/sugar combo didn't really stay on top of the crackers--it sunk beneath the crackers. The chocolate chips were clumpy and unmelted after 5 min. so we cooked it 3 more. Still clumpy and didn't look right. We haven't tasted it yet, but so far I am really disappointed!

Baked Ziti with Sausage

Loved it! So did my husband and kids. Even the 3-year-old asked for seconds. Definitely serves 8 hefty portions, maybe more like 10. Great flavor! We didn't have mozzarella, so we used Colby Jack, and I really liked it. It seems like this recipe would handle additions and substitutions well, and it was easy to prep and baked fast. Can't go wrong with this dish!

Super Filling Cannellini Bean and Escarole Dish

Yummy! My husband and 4 of my 6 kids gobbled this up! I doubled the recipe, but we had so many leftovers I probably wouldn't have needed to. It really is filling. I used fresh tomatoes instead of canned and one romaine heart instead of escarole because I don't know what that is. I'm not a fan of cooked lettuces, so I probably won't do that next time and I'll add more onion and garlic. 4 stars because it's a little bland before you add seasoning. It was good and a nice break from Italian, Mexican and Chinese which we do frequently.

Whole Wheat Blueberry Pancakes

I tweaked this recipe a little and loved the results! I doubled the recipe, adding 3/4 c. rolled oats and an extra egg. I also substituted the regular milk with coconut milk (about 2 1/2 c. because I doubled the recipe), used 3/4 c. brown sugar instead of artificial sweetener and used frozen mixed berries instead of fresh blueberries. I was pleasantly surprised how light and fluffy these were--not the heavy texture and "healthy" taste I was expecting. They were really good! Everyone in my family (hubby and 6 kids under age 10) gobbled them up.

Taco Pies

This recipe gets 5 stars w/ 2 minor alterations. Seasoned the ground beef with taco seasoning and stirred a can of black beans into the beef mixture before layering it on top of the refried beans. Quick, easy, healthy, inexpensive and my husband and 6 small children loved it! I think I'll make it the next time I offer to bring a meal to someone. You can't go wrong!

Extra-Easy Spinach Lasagna

Super easy and so good! I accidentally put all the mozzarella in the ricotta/spinach mixture, so I had to get out more for the top. 5 kids under age 9, including a neighbor who claimed he doesn't like spinach, ate it up! Raw noodles cooked perfectly. Definitely a keeper!

Crustless Spinach Quiche

I used minced garlic instead of the onion and fresh sauteed spinach in place of frozen. I baked them in a silicone muffin "pan" and they turned out great! Kids weren't crazy about them, so more for me and hubby!

Spinach Cheese Manicotti

My family (including 5 kids age 8 and younger) devoured this! There was just enough for all 7 of us to have hearty helpings and seconds. I added some minced red pepper to the spinach-cheese mixture and doubled the garlic. Fabulous and so easy! Everyone wants me to add this recipe to the standard rotation, and I definitely will. Thanks, Ernie!

Eggplant with Tomato Sauce

Eggplant didn't seem cooked all the way through, but I was glad for a quick, easy recipe. Especially good with mozzarella slices melted on top. Using the leftovers to make sandwiches!

Pumpkin Pancakes

We made a double batch, but didn't have any baking soda. While I was browsing the Internet for a substitute, my 3-yr-old dumped in a small canister of baking powder--23 teaspoons. We scooped out what we could see and hoped for the best. These pumpkin pancakes are indestructible! So yummy and can withstand major alterations! All 5 kids and my husband gobbled them up and we will be using this recipe again!

London Broil

I used top round steaks and I didn't have meat tenderizer, MSG, lemon pepper, fresh garlic or parsley, or tarragon vinegar. So this isn't the most accurate review of the recipe. I did puncture the meat and throw it in a gallon-size bag with all the ingredients, substituting dried garlic and parsley and white wine vinegar. I let it marinate 2 hours, grilled the steaks about 5 min/side and they were mouth-watering! Everyone from my 1-yr-old to my husband loved them. Will make this agian and again!

Almost Stuffed Peppers

Just made this tonight for my husband and 4 kids under age 7. I put the peppers and onions in a food processor for the kids, but other than that I followed the recipe exactly. The kids all ate it and 3 of the 4 really liked it. The baby couldn't get enough! My husband had seconds and we polished off the whole pan. It's a tasty, quick and easy alternative to stuffed peppers.

Crispy Butterscotch Cookies

Just finished baking these cookies with my kids (ages 3 and 5). We only made one alteration to the original recipe: using 3/4 c. sugar instead of the full cup. The dough is a little crumbly until you firm into balls with your hands. We baked the first batch on greased cookie sheets for 11 min. and they turned out crisp but good. We baked the second batch on an ungreased stone and these cookies were melt-in-your-mouth delicious. Might make this my new signature cookie!

Banana Crumb Muffins
