Minute Chocolate Mug Cake

Loved this! Made it with my five year old as a quick fix when she requested chocolate cake. It was easy enough for her to make herself! I also subbed the milk with coffee mate 'Abuelita chocolate' creamer which gave this a great Mexican chocolate taste. My only issue was that it took longer than 45 seconds to cook, more like 1 min & 15s...although that may have been my error since I eyeballed my proportions and also used baking choc. In bar form. The baking choc turned out to be a happy accident though, because the extra choc sank to the bottom making it's own ganache. My daughter was thrilled!

Cranberry Orange Loaf

I made this bread last night with the following changes...I roughly chopped my cranberries and I used bread flour as it was all I had on hand, and I made a glaze of 1/4 cup powdered sugar and 4 tsp OJ. This bread was fabulous! Best bread I have made. My husband immediately requested I make mini loaves for him to take to work! My husband had suggested though that next time the cranberries be chopped finely to disperse them more throughout the bread, the tartness was so good with the orange flavor he said he wanted more of it with every bite.

Country Apple Dumplings

This was really delicious! I was very skeptical about the soda, but of course it turned into a delicious syrup. I like that this recipe really lends itself to modifications, because I definately made some based on what I had. I only had one can of crescent rolls, and black cherry fresca on hand. I am sure that if I had followed the recipe to the letter it would've been even better. I halved the ingredients as well, and I cut each crescent triangle in half in a 8x8 pan. It turned out to be the perfect amount for our family, and the small macintosh apples I used didn't turn to mush like I feared they would. Also this was not soggy, the consistensy was what I expected. Great Recipe, easy to make... thank you!

Butter Flaky Pie Crust

This was my first ever pie crust attempt that went along with my first ever pie/apple pie. I truly had no idea what I was doing and assumed it would be a learning experience/ disaster. After reading others' reviews I did everything people commented on frequently. I kept all my ingredients cold and continually stopped to keep things cold. The reviewer who suggested using a grater was my pie crust angel!! I beleive that this person made my flaky crust happen. I have no chopper, I did once but it has been lost in storage after several moves since the beginning of my marriage. Grating was the perfect way to evenly distribute balls of butter throughout the dough. I also heeded the other beginner who stated that the dough could be rolled out once and then brought back in again and rolled a second time. This made rolling so easy and smooth. The crust was incredibly flaky, buttery, delicious and so easy to make! I used this crust with the famous Grandma Ople's Apple Pie, and it was completely amazing, I couldn't beleive it was my first pie and I had done it. I will never search for another pie crust. This is it!
