French Toast Casserole

I had an over-abundance of cinnamon raisin bread; needed to make a quick dinner; and I found this recipe. I cooked it in a 9" x 12" pan at 350F. It was perfectly cooked at 30 minutes. My family was delighted and has requested it again tomorrow for breakfast! The texture was lighter and more tender than French Toast (but not at all mushy) and it was less creamy than bread pudding. This recipe is a new variation on a favorite theme in this house. I look forward to trying other reviewers' ideas for this recipe in the future. I love it that people feel free to tell us about their substitutions. It is what I like best about this web site.

Easy Cranberry Chicken

This was perfect served over brown rice. My family loved it and it couldn't be easier. Many thanks to reviewer Cheri Nobriga for the idea of substituting a 2.8 oz. can of French Fried Onions for the onion soup mix. It was so good I may never even try it with the soup mix. I used whole berry cranberry sauce and the berries added to both the visual and taste appeal. Thanks Alice, for sharing this delicious recipe!

Golden Sweet Cornbread

Very good! and not too crumbly. I did make a few revisions based on reviews: 2 eggs; a scant 3 t. baking powder; a bit less sugar; and I soaked the corn meal in milk for 15 minutes. I will continue experimenting but this is an excellent base recipe. It's a keeper!

Buttermilk Pancakes II

This is a really nice recipe for basic buttermilk pancakes. I like to cook them up and freeze them in zip bags so the family can serve themselves whenever they crave pancakes. Everyone likes them so much better than any of the store-bought frozen choices!

Surprise Burgers

These were a bit messy but ... YUM! Everyone loved them. I cooked them in the broiler and served on some nice bakery buns with a thin slice of red onion. So quick and easy. Will make again for sure!

Celebration Pie

This sweet recipe is incredibly quick and easy. I used strawberry drink mix and added 1/2 tsp. of lemon juice. Everyone loved it. I look forward to making many variations on this easy theme when I need an easy, pleasing dessert ... LOL, did I mention how easy this was?

Ranch Burgers

I usually make plain beef burgers and serve with lots of condiments to add flavor, but my family requested burgers "with stuff in them." I had everything I needed for this recipe except saltines so I substituted panko crumbs. I broiled them and ground a little pepper on top. No one asked for condiments. They all said this recipe is a keeper... and I agree.

Mammaw's Waffles

Great recipe. Had to cook as pancakes since I don't have a waffle iron any more. I made these for my dad who loves waffles and never met a pancake he didn't like. He amazed me when he said that they weren't like pancakes OR waffles but were BETTER THAN BOTH! Can't wait to make them for the rest of the family.

Pork Apple Burgers

Made these up quickly for unexpected company and everyone loved them. I cut back to 1/2 of a small Vidalia because of an onion-adverse child & didn't have a Granny Smith so used part of a Fuji. I was nervous because the patties seemed so wet but they cooked up perfectly on the grill. This is a definite keeper. Thanks Kevin

Sage Pork Chops

I had six 1/2" boneless loin chops. As others suggested, I cut back the salt by half. I added 2 cloves of minced garlic to abt. a cup of beef stock and heated in the microwave. After consulting the otherwhitemeat.com website I decided to brown the chops over medium high heat for 1 minute on each side. Added the hot broth, covered tightly and simmered for 8 minutes. They seemed done but I let them go 2 more min. to be sure. They were very thoroughly cooked but still tender and flavorful. Served with potatoes and green beans and my family RAVED! Many thanks!

Garden Pasta Salad

This is a favorite at our summer, family gatherings. I prefer to omit the bell pepper (and usually the cheese) and everyone still likes it. One bottle of Italian dressing is plenty, although if there are leftovers my sister-in-law likes to add some additional dressing when she serves them. If you prefer to use fat-free dressing it is still very good the first day but is not very good as leftovers. I love this recipe and love its versatility!
