Black Bean and Salsa Soup

I really liked this soup! I have made it twice now. The first time I substituted lowfat whipped cottage cheese for the sour cream, and the second time I used nonfat greek yogurt. Both times I added some shredded chicken to the soup (after it came out of the blender, of course). Quick and easy recipe!

Grilled Lemon Yogurt Chicken

This was delicious! I used chicken breasts, marinated them overnight, and cooked them in a skillet on the stove (we don't have a grill). They turned out so moist and had such great flavor! We enjoyed them with the dipping sauce as well. Thanks for a great recipe! :)

Honey Baked Lentils

Oh. my. goodness. This has literally become one of my favorite, FAVORITE dishes to make! I just made it for the second time. It is so delicious! I followed the recipe to the absolute (something that is hard for me, hah), and it was perfect. I served it over plain white rice with a vegetable on the side (asparagus, a salad, etc.). I will make this again and again! Correction: I looked back at the recipe and realized I did make two small changes. I didn't have whole bay leaves so I just sprinkled some of my crushed bay leaves in (which I could not remove after boiling, of course, so just left them in). Also, I didn't have dry mustard so I just used a tsp of regular yellow mustard. Worked for me!

Zesty Slow-Cooker Italian Pot Roast

This was just... "meh" for me. The meat and vegetables cooked nicely, but it didn't seem to have much of any flavor. I have to add, I'm not much of a pot-roast fan to begin with, but still...this recipe didn't wow me at all.

Buttery Corn Bread

Tried this cornbread, and it was okay. All right, it was pretty good, but I was comparing it with the recipe on this site called "sweet corn bread" which I had just made previously, and I'm sorry to say, this recipe fell short. We still ate it, but I will be making the "sweet corn bread" from here one out, since my husband and I both prefer that one.

Baked Penne

Oh my word...I must admit, I made this recipe only expecting it to be "okay." Wow, was I blown away! It was incredible!! My husband tells me that this recipe is going on our list of "recipes to impress" for when we have company. I'll just be sure not to tell company how easy it is to make! :) I didn't make a single change to this recipe, and it turned out great. Thanks for sharing!

Wow, this was so SO delish! It was only a side dish, but it was my favorite part of the whole meal! I'm so glad I tried this recipe. It is simple to make but it tastes absolutely amazing! Followed recipe to the letter - wouldn't recommend a single change. Thank you!

This recipe was very good! I used three large and very long hothouse cucumbers. I should have cut the dressing in half, because I ended up with way too much. But the taste was delightful and I would definitely make this again!

Sugar Cookie Frosting

Yum! This frosting was exactly what I was hoping for. The flavor is perfect, and so is the consistency. The frosting didn't harden completely, just enough to help it hold it's shape, which is great because I like my sugar cookie frosting to be soft when I bite into it. Thanks for the great recipe!

Soft Sugar Cookies IV

These cookies were awesome! So easy to make and had such great flavor! I DO recommend pressing each ball of cookie dough down lightly before baking, as the cookies do not spread out very much. I used the bottom of a glass for this. Just don't flatten the dough too thin or you'll have thin and crispy "sugar crackers" instead of cookies, haha.

Fluffy Pancakes

Wow. That is all I can say. WOW! ...Okay, I'll say a few more things :) These are by far the BEST pancakes I have ever eaten in my life! They were so easy to make, and the outcome blew me away! My husband's words at the table were, "Oh my goodness...oh my goodness...etc." I did let the batter set at room temperature for about 30 minutes, as others said that would make the pancakes better. I also added 1 tsp vanilla and a healthy dose of cinnamon. Yum!

Sweet Corn Bread

This cornbread is excellent! My husband says it is the best he has ever had. So I'll be making it over and over in the years to come! I followed the recipe exactly - no changes needed! The cornbread is soft, yet holds together well without crumbling (and crumbly bread/cake irritates me to no end). The sweetness is perfect - not too much and not too little. Five stars!!!

Apricot Lentil Soup

This was good! I have to say I disagree with those who said increasing the amount of apricots made it too sweet. I only used the 1/3 cup (finely chopped) apricots that the recipe called for, and I could barely taste any apricot/sweetness at all in the finished product. Next time I will definitely increase to 1/2 cup at least. That said, the soup was super delicious! I doubled the thyme and cumin (as suggested by many reviewers), and I'm glad I did. Perfect blend of spices!
