Acapulco Chicken

Love this recipe! The only change I make is omitting the bell pepper (personal preference). It is a regular recipe for us as it is so quick and easy to make- a great weeknight meal. Would also be good using thin strips of beef instead of chicken.

Chicken With Mushrooms

Very tasty! Different way to cook chicken... I get so bored with traditional chicken recipes. May try with a little white wine next time, too. Only comment from the Peanut Gallery was that there wasn't enough sauce to go with the egg noodles.

Ann's Sister's Meatloaf Recipe

This was okay. Nothing spectacular to speak of. I would recommend using plain tomato sauce to top it off with. I tried diluting tomato paste and that was thick and goopy even with all the water I added. I also tried serving with a can of Meatloaf Sauce and it was not good at all; kind of tangy, actually.

Arrabbiata Sauce

I absolutely LoVeD this sauce with penne pasta! Personally, I give it a 5, but my husband only rated it a 3 (something about heartburn, I think). So my rating is an average of his opinion and mine. Followed the directions to a T and it came out very well. Was fairly simple and quick, too. Great for a weeknight vegetarian meal.

Simple Spinach Lasagna

Very good recipe and a great way to use the fresh spinach we had in the refrigerator. Used 1 bunch fresh and about 1/2 a box frozen, plus a package of fresh mushrooms, also substituted Ricotta for the cottage cheese, per suggestion. Took a bit of prep time for a weeknight, but w/hubby helping out and it went a lot faster. Turned out great! He even took the leftovers to work to share!

Scallops and Spinach over Pasta

I added 2 cloves of fresh garlic (we LOVE garlic) when cooking the spinach. Also added a little chicken broth in place of the water. My husband thought it needed a little more sauce, but other than that, we really enjoyed this recipe. We're always looking for tasty ways to eat more spinach and this works for us.

Baked Tomatoes Oregano

Very delicious! I love cooking with tomatoes so this was right up my alley. It does have an Italian sort of flavor so I suggest serving it with the same type of main dish.

Catfish Pecan

Pretty good once it is spiced up per other reviewers (cayenne, red pepper flakes and Cajun/Creole seasoning). Not anything amazing, but something a little different to try. Don't forget to give it a little squeeze of lemon juice!

Yum Yum Veggie Foils

These were great at a family barbeque! I used potatoes, onions and corn and everyone was satisfied. Simple recipe, easy to prep and oh, so tasty! Be sure you have the extra big foil on hand or else wrap them in several smaller pouches.

Green Rice I

First off, this should really be called Spinach Rice Casserole as it is a lot like a fave of mine, Broccoli Rice Casserole. Like others, I actually expected green rice for some reason. Definitely needs a good dose of pepper and don't forget the extra cheese. May try again with regular milk instead of evaporated as it wasn't that creamy and maybe add some butter. Oh, and the directions were kinda skimpy.

Jalapeno Chicken II

Wonderful recipe! I made this at a family cookout and it was a hit. Used the jalepenos in a jar so they were very juicy, but not too spicy. Now I crave this every time we barbeque!

Tangy Egg Salad Spread

Not a big egg salad fan, but wanted something different for weekend sandwiches. Turned out OK, but a bit runny... maybe I used too much mayo?? The spices were great. Used dijon mustard and added diced onions.

Fantastic Lemon Butter Fillet

WOW!!! This was great! We've never cooked cod before (not readily available at stores here), but with this recipe, we discovered that we LOVE this fish. This was so simple and classic, I can't wait to try it on other types of fish as well. Highly recommended for lemon, garlic & butter-lovers!

Buttery Cinnamon Cake

Incorporating other reviews, I used butter flavor shortening and added extra cinnamon to the cake batter. Also used less water for the sauce topping, but it still came out a little watery (maybe too much butter?). The cake itself is good, but as others have said, a little dry. Don't know how to fix that. My husband said he ate this because he was hungry, not because he especially liked it.
