Chicken Breasts in Caper Cream Sauce

This was delish. I doubled the sauce but left out the capers because my kids won't eat them. It's a mental thing. Will definitely make this again.

Bacon Wrapped Hotdogs

I've made these twice, once with the brown sugar and once without. I actually prefer them without, it just added a slight sweetness and I didn't think my kids needed the extra sugar. Although I'm not sure who ate more, the kids or the adults! Make sure you splurge and buy ALL BEEF hotdogs. Very addicting.

Boudreaux's Zydeco Stomp Gumbo

DO NOT ruin your gumbo by using 1/4 CUP of cajun seasoning (ie Tony Chachere's) it's all salt. I even used half of the salt free blend and I'm trying to salvage it now. 1/4 Cup is a LOT of seasoning...start low and taste. Oh, and I like salt, that's the funniest part.

Chicken Parmigiana

I hate thick chicken so I took the breast and sliced it in half (I guess you could pound, but this works better for me, it's easier). Also used my own spaghetti sauce, not the basic jar sauce. It was yum!

Antipasto Squares

This was a huge hit. I did cook the bottom layer in the oven for about 5 minutes first and patted the meats dry. I personally don't like roasted red peppers so I skipped them but then added an extra layer of meat and cheese. Sliced black olives would have been good too. Adding the top layer of crescent rolls was pretty tricky so I was afraid it would look awful, but once cooked it puffed up and the presentation was fine. Don't forget to brush the top with the egg mixture. I've been asked to make this many times....oh and the leftovers are great for breakfast!

Spaghetti Pizza I

My picky kids are devouring this as I type. I accidently used one full cup of cheese in the pasta but it was yummy and turned out fine. I was worried that a 9X13 pan would be too big, but the pasta was just enough on the bottom to form a thin crust....a smaller pan would have made for too much pasta. A whole jar of sauce scared me a tad, but once again, it was enough, possibly could have used a bit more. Overall, this was a super easy and yummy recipe. I might even let me kids help me next time. Thanks!

Blue Cheese Burgers

My husband said these were now his favorite burgers! I used 2 lbs meat with 4 oz blue cheese and I thought it was perfect. I toasted the buns and topped with lettuce, tomato, red onion and avocado with salt and pepper. Oh yea, and some mayo...YUM.

Cheesy Ranch New Red Potatoes

These were delish. I cubed them up before boiling, stirred in the ranch and cheese and then placed them in a foiled line pan for easy clean up. Topped with crumbled bacon and heated through. Be sure not to cook them too long, as they will break up. Yum, there were no leftovers!

Simple BBQ Ribs

DO NOT use this recipe if you enjoying gnawing meat off of the bone! The meat fell right off and was extrememely tender and moist. After boiling for 1.5 hrs, I covered them in bbq sauce (homemade) wrapped them in foil and baked for 1.5 hrs. I unwrapped the foil during the last 10 minutes to bake the sauce onto them a little more. My 5 yr old was a little upset that she wasn't able to eat them off of the bone....the fun of ribs! Cleanup was a breeze because of the foil. Will make again!

Bar-B-Que Sauce

Delicious, nice tangy flavor. I doubled the batch and then added half of a bottle of KC masterpiece for added thickness and a little more smoke flavor. Was still tangy and did not have that store-bought taste. Will make this every time now. Hubby loved it!

Best Burger Ever

I used ground chicken instead of beef to save calories/fat grams and it was yummy! I used the whole pouch of onion soup mix, 1 tsp hot sauce, 1 tsp worchestershire, 1/2 an egg and omitted the oats. Turned out pretty tasty!

Exotic Fruit Drink

I thought the combination of juices was great, but I felt that it just watered down my club soda after 5 minutes. Don't get me wrong, it tasted great, but made the bubbles go away pretty quick, if that makes sense. I can't imagine serving this for a party, there is nothing *party* about it. Refreshing, I suppose you could say. We actually liked using the mixture for smoothies with ice in our blender!

My Mom's Sausage & Rice Casserole

Ok, I had to try this recipe because the ingredients sounded so odd and it had great reviews. Awesome! To combat the "bland" taste that others reported, I mixed my soup with the hot water and added 2 chicken bouillon cubes until disolved, then added to meat/rice mixture. I think this really did the trick. Used jasmine rice instead of plain ol Uncle Bens. I didn't have any almonds so I skipped this and it was still yummy. Try it, if you like sausage and rice, you'll like it!

Fantastic Black Bean Chili

This was EASY and AWESOME! I ended up using 3 14oz cans of diced tomatoes, 2 tsp of cumin, chopped up pickled japapeno (even dumped some of the vinegar in) and used lean ground beef (it's what I had on hand). Don't think I'll ever go back to "regular" beans. It's black beans from now on!

My Best Clam Chowder

I'm a little bit surprised at the reviews on this recipe. Consistency was good if you like nice and thick chowder, but the taste was a tad bit lacking. If you have never made chowder before, then I suppose this would be a good recipe. On the other hand, if your a chowder buff, you may be a bit disappointed. I didn't add the bacon as others suggested, may be I should have. Be sure to cook the flour mixture a bit, otherwise you will have a flour taste. And go easy on the red wine vinegar. I could taste it once I was done. I did add more clams and used a combo of chopped and minced. I like larger clams (not too big) and was glad that I did this. Not a bad recipe, but certainly not 5 stars in my book. Sorry I couldn't rate this better, just being honest.
