Spicy Sausage Casserole

I took a lot of liberties with this recipe, all of which turned out great. I added 1 cup of uncooked long grain rice and 1.5 cups water to the bottom of the casserole dish. I used turkey-smoked sausage to lower the fat content. I omitted the peas and mushrooms and sliced up two small zucchini instead. I used frozen corn instead of canned. And I used a teaspoon of Italian seasoning instead of the bay leaf and thyme. It was GREAT and the whole family loved it. Very hearty!

Thai Pork Satay

This was excellent! Wonderful flavor. I added mushrooms and tomatoes to the kebabs. Next time I plan to try the sauce with chicken. Definitely a keeper recipe.

Roast Leg of Lamb with Rosemary

This is delicious. Makes the lamb "melt-in-your-mouth", and very easy to put together. My only variation on this recipe was to "stuff" the lamb leg with garlic cloves before marinating it. (There is no such thing as too much garlic!)

Greek Garbanzo Bean Salad

A great salad! Like someone else suggested, I used creamy italian salad dressing instead of regular italian. I also used considerably less olives than what it called for, a 4 ounce can instead of 15 ounces, and increased the feta to probably 2-3 ounces. It turned out great and got a lot of compliments at the cook-out where it was served.

Asparagus Cashew Rice Pilaf

This dish has great flavor. My mistake was making it up ahead of time and keeping it warm in the oven for about an hour. The cashews became fairly soft during this time and I probably would have rated it 5 stars if I would have served it immediately. For the same reason, it's probably not a great dish to make extra of for leftovers... But it's definitely a keeper recipe and I'll make it again.

Six Can Chicken Tortilla Soup

Amazing that something so simple can be so good! I used a couple of chicken breasts, cooked and chopped, as well as fresh tomatoes from my garden with a small can of green chilies. I also added a little bit of cumin and chili powder to spice it up a bit. Great recipe that is destined to become a mainstay at our house.

Great recipe. I happened to have all the ingredients on hand and made it for a quick weekday supper. The whole family loved it, and there were no leftovers. The flavor of the sweet corn in the Old Bay Seasoning was terrific.

Broccoli and Sausage Cavatelli

I have made this several times now and the whole family loves it. It is quick and delicious. I have varied the veggies according to what I have on hand and have found that zucchini, yellow squash, and bell peppers are also very good in this dish. Thanks for a great recipe.

Man's Way Sausage

This was very good, and easy. I added some chopped red and green bell pepper as well as chopped onion. Also added a little half-and-half to the eggs and poured them over the sausage, potatoes and peppers in the 9x13 baking dish, then baked the whole thing for about 30 minutes. Kicked it up a notch with a little cayenne pepper too. My men loved it. :-)

Tuna Waldorf Salad Sandwich1

Great sandwich! I doubled the amount of tuna called for because one can just didn't seem like enough considering the quantities of the other ingredients. It came out perfect. A delicious recipe that is healthy to boot.

Pumpkin Chili Mexicana

This was excellent! No one had a clue that it contained pumpkin, although I do think the pumpkin gave it a slightly creamier texture than normal chili. I didn't have any tomato sauce on hand so I substituted a 15 oz. can of chicken broth. It was still very thick and the flavor was great. This is a keeper.

Spicy Turkey Burgers

These were very good! I substituted a 4 oz. can of diced green chiles for the fresh chiles, used 2 tbs. dried cilantro instead of the fresh, and about a half tsp. of ground ginger intead of fresh. Other than that I followed the recipe verbatim and it came out great. My grill ran out of gas before I flipped the burgers, so I finished them in the oven on a broiler pan and they were still great.
