Homemade Tomato Sauce I

Great recipe! I modified just a little, adding some fresh chives and parsley from my garden (in addition to fresh basil). Also omitted the celery and added red pepper flakes as my family likes heat. Everyone in my family gave it a thumbs up.

Kathy's Baked Stuffed Tomatoes

I am the recipe author so am not rating the recipe. Just wanted to note that fresh spinach is a perfectly acceptable substitute for the arugula, and I use it frequently. My original recipe submission said spinach or arugula, but for some reason it didn't show up when the recipe was published. Other cheeses can be interchanged successfully as well.

Jay's Jerk Chicken

Yummy! I marinated boneless pork chops in this recipe and they came out melt-in-your-mouth tender. I substituted a 4 oz. can of diced jalapenos for the fresh, also cut the soy sauce back to 1/2 cup tne the vinegar to 1/4 cup. It was delicious, will definitely use this recipe again!

Grilled Marinated Shrimp

This is a delicious shrimp marinade. We eat a lot of grilled shrimp during the summer and I have used this recipe numerous times. I usually substitute ketchup for the tomato paste, and sometimes add a little cayenne pepper for extra kick (we like hot & spicy dishes).

Fruit Salad with Orange Ginger Dressing

A delicious light and healthy dressing that enhances the flavor of the fruit without overpowering it. I used about a teaspoon of fresh grated ginger, and used cantaloupe and peaches for the fruit. A big hit with the whole family.

Asparagus, Orange and Endive Salad

Delicious and refreshing salad. I tweaked it a little bit according to what I had on hand. I used baby spinach instead of endive, green onion instead of red onion, and raspberry balsamic vinegar instead of raspberry vinegar. I also added some sliced, grilled chicken breast to make it a main dish salad and sprinkled sliced almonds over the top. It was a great light supper for a hot summer day.

Spaghetti Salad I

I used cavatappi instead of spaghetti, other than that I followed the recipe to the letter. It was delicious, and a little on the spicy side for those who like to "kick it up a notch". It makes a LOT, great for a picnic or get-together.

Spicy Turkey Burgers

These were very good! I substituted a 4 oz. can of diced green chiles for the fresh chiles, used 2 tbs. dried cilantro instead of the fresh, and about a half tsp. of ground ginger intead of fresh. Other than that I followed the recipe verbatim and it came out great. My grill ran out of gas before I flipped the burgers, so I finished them in the oven on a broiler pan and they were still great.

Miss Bettie's Zesty Grilled Corn

Pumpkin Chili Mexicana

This was excellent! No one had a clue that it contained pumpkin, although I do think the pumpkin gave it a slightly creamier texture than normal chili. I didn't have any tomato sauce on hand so I substituted a 15 oz. can of chicken broth. It was still very thick and the flavor was great. This is a keeper.

Tuna Waldorf Salad Sandwich1

Great sandwich! I doubled the amount of tuna called for because one can just didn't seem like enough considering the quantities of the other ingredients. It came out perfect. A delicious recipe that is healthy to boot.

Man's Way Sausage

This was very good, and easy. I added some chopped red and green bell pepper as well as chopped onion. Also added a little half-and-half to the eggs and poured them over the sausage, potatoes and peppers in the 9x13 baking dish, then baked the whole thing for about 30 minutes. Kicked it up a notch with a little cayenne pepper too. My men loved it. :-)

Broccoli and Sausage Cavatelli

I have made this several times now and the whole family loves it. It is quick and delicious. I have varied the veggies according to what I have on hand and have found that zucchini, yellow squash, and bell peppers are also very good in this dish. Thanks for a great recipe.
