Veal Stew

Reviewed: May 8, 2005
Deeeelish! I altered the recipe a bit: Add (1) bay leaf, 1/2 C. chicken stock,(2) carrots, (2) celery, (2) potatoes, dash of oregano, and 1/2 canelli beans (optional). Words of advice: Sautee onions, carrots, celery, and garlic together. And add the potatoes and the beans in the last 1/2 hour so they don't get too mushy. I like this dish served over white rice. Great recipe; thanks Marie!!!

Baked Salmon Fillets Dijon

Reviewed: Jun. 23, 2003
Very tasty...the indgredients didn't overwhelm the salmon; it really let the flavors of the salmon come through. Salmon also was timed perfectly and came out nice and moist. I also used olive oil instead of butter and added a little fresh dill on top.

Basic Flaky Pie Crust

Reviewed: Jun. 9, 2003
This was a very EASY recipe to follow and went very well with Grandma Ople's Apple Pie recipe (also on this website). It came out flaky and a beautiful golden color. I also used the leftover scraps to decorate the top (ie. rose, leaves). Tip: make sure you crimp the edges closed so your pie filling won't ooze out.

Apple Pie by Grandma Ople

Reviewed: Jun. 9, 2003
Yummy in my tummy:-) My first time making pie and I must say that I was quite impressed by how great it tasted. I did add the cinnamon and vanilla (forgot the nutmeg; will do next time.) My dinner guests were impressed as well. I served it with vanilla ice cream. I would definitley recommend this as a crowd pleaser.

Old Fashioned Lemon Pie

Reviewed: May 21, 2003
Where did I go wrong?!?!? I followed the recipe to a 'T' and my lemon filling did not thicken as directed. So I ended up with lemom liquid:-( I'd like to try this recipe again-any advice from my fellow chefs?

Florentine Stuffed Chicken

Reviewed: May 17, 2003
Room for improvement-but good, basic recipe to start with. I would watch my cooking time to 25 mninutes, I overcooked my chicken with the 35 minute directions. Next time I will season my chicken more and add ricotta cheese to the stuffing. The 1/4 c. parmisan lacked the "kick" the stuffing needed. I also sauteed the onions with garlic (2 cloves) before mixing it with the spinach. A recipe worth a second try for me. Other than the chicken being overcooked, the presentation was pretty ( I served with four large ricotta/garlic raviolis with extra sauce).

Kelsey's Favorite Stuffed Green Peppers

Reviewed: Apr. 21, 2003
This recipe was pretty bland. Boiling the peppers too long made the peppers more on the soggy side and I had too much meat left over. Hence, boil less and use less meat if you want to make this. I'm still on the hunt for a better stuffed pepper recipe.

Chicken Marsala

Reviewed: Apr. 9, 2003
Wow! This was really easy and very delicious.I omitted the olive oil because I thought putting both olive oil and butter would be too much. I also seasoned the chicken a little so that it would not be bland (garlic and onion powder, salt, and pepper). I also threw in some minced garlic in the butter as the chicken cooked. If you like mushrooms, I would put 2 cups intead of one. I served this dish with mashed potatoes and leeks. Overall, I would definitely make this again.

Pico de Gallo Chicken Quesadillas

Reviewed: Apr. 6, 2003
Deeelish!! My first time making this and it was a breeze. I'm not a spicy food lover and the pico de gallo was just right. However, if you like hot, add more jalepeno or include the seeds of the jalepeno. I also seasoned the chicken strips before cooking with salt, pepper, garlic and onion powder to give it some flavor. I would definitely make this again.
