Grilled Vegetable Platter

Delicious!! I used portobella chucks, zucchini chunks, and summer squash chunks and it was so yummy! I also added some parmesan cheese to the oil and seasoning salt. I was planning to use the grill basket but decided to just put them in a sealed aluminum foil pouch and toss them on the grill for about 15 minutes. Afer they were done I made them into a sandwich with some jarlsberg cheese and tomato mayo on homemade focaccia...mmmmm! Perfect! Like something served in a restaurant!

Fabulous Zucchini Grinders

Here's what I did, sauteed the zucchini (I quartered my 3/4 inch thick circle slices) in olive oil and sprinkled with seasoning salt. I then used pizza sauce instead of marinara since we had it on hand. After heating this all up I just tossed in the shredded mozzarella and cooked it all together then put it on my toasted hoagie rolls. I added an extra sprinkle of mozzarella because I love cheese. It was so delicious! If you toast the rolls first then just melt the cheese in with your zucchini it will not make your rolls soggy and it is also quicker to throw together. This is one of my new favorite recipes! It is so versatile! The next day I had some extra yellow summer squash and used it in place of the zucchini and had an equally delicious grinder. I'm sure you could use eggplant too, and maybe even add some olives and feta cheese. The possibilities are endless but the base recipe it great as is!

Bread Machine Focaccia

This was pretty good but after I tried it I tried a more popular traditional focaccia recipe from this site and just put those ingredients in my bread machine and it came out beautifully. I don't think I'd use this recipe again, the texture was a little off but the flavor was great, although I'd prefer a little more seasoning. Used it to make grilled vegetable sandwiches which tasted great!

Focaccia Bread

I used my bread machine to do the mixing on the dough cycle, then I let it rise an extra 15 minutes after shaping it on the pan. It rose very high while baking, too much for a traditional looking focaccia but it tasted wonderful! It did not need that extra 15 minute rise. I will use this recipe again. The focaccia made wonderful 'buns' for some grilled portobella mushooms, yummy!

Easy Biscuits

These were great! Made them on night for strawberry shortcake and added 3 tbsps of sugar to the dough. Turned out very yummy but they didn't rise much so I would aim to make a thicker biscuit than just 1/2 inch. Had the rest the next morning with strawberry jam and butter, great breakfast! I think without the added sugar to the dough these would have been pretty bland. You could also add vanilla or butter flavor to the dough.

Big Guy Strawberry Pie

I've made this pie twice in the past week! It's wonderful! I quartered my strawberries because I like the texture better than just big strawberries and gel, I would use 2 1/2 cups of quartered strawberries and instead of pouring the gel over them I would first mix the strawberries and gel, then pour them into the crust to get everything more evenly set. LOVED the crust, so easy and tastey. I used glass pie dishes and sprayed them with nonstick baking spray and there was no sticking with the crust, which really surprised me because I always have trouble with the crust sticking on other recipes. Husband loved it too, I'm sure I'll be making this again next time we have strawberries in the hosue. I wonder if you could do this with blueberries and blue food coloring...sounds like it might work!

Field Salad

This is a wonderful salad, sometimes I use craisins and honey roasted sliced almonds /(almond accents) instead of the apples and walnuts. An elegant favorite every time!

Dr. Michael's Yeasted Cornbread

Let me start by saying I love cornbread and I love regular yeast breads and I did not really care for this. I had this recipe in my online recipe box and have been wanting to try it for a long time but am really dissapointed. It was edible with butter and honey but not something I went back to after the first slice. Usually you have to drag me away from bread! I guess it just wasn't for me...I think I'll try making some croutons or french toast with it. It's pretty bland...

Calzone

Just used the dough recipe and our own fillings, this was a great dinner! I made two calzones, one as written that turned out really pretty (for a dinner item) and one like the traditional looking calzone. My husband liked them too, many possibilities with this recipe, thanks!

Banana Bread VIII

This bread was delicious! I made mine in a 9 by 5 pan since that's all I had and I will make it again but just double the recipe for a 9 by 5 pan. Soooo moist and doesn't dry out! I made two banana breads on the same day and this one kept much longer and was the best tasting! My one year old loves it :)

Asparagus Parmesan

Yummy! Never had asparagus prepared any other way than boiled and this was wonderful! I switched the olive oil and butter amounts since I only had a little olive oil left and it turned out fine. Not the healthiest way to eat your asparagus but certainly tastey!

Oatmeal and Applesauce Pancakes

These were not that great, pretty bland and I even used sweetened applesauce. I had to add an extra 1/3 cup milk and they were still really thick and hearty. Not sure I'd bother with these again.

Easiest Eggplant

WONDERFUL! Such a tastey and easy way to prepare eggplant, who would have thought?!? Made this for dinner and my one year old daughter loved it! Had some left overs the next day and baked them in the toaster oven and made a toasted eggplant sandwich with some provolone and home made garlic bread --- oh so yummy! This is my new favorite way to prepare eggplant! Thanks for this recipe!

Bread Machine Garlic Bread

This bread was wonderful! After I started I realized I was out of parsley so I used two tablespoons basil instead. This bread had an amazing basil garlic flavor...not sure why some people's bread lacked garlic flavor, maybe the brand of garlic powder?? Anyway, followed directions to a T except the the parsley/basil switch and this is a new favorite. It does make a somewhat short loaf, but when it's cut it looks like real sliced loaf bread, not that tall bm bread. Made eggplant sandwiches on this bread toasted....mmmmm! A+++ recipe!

Wheat Germ Whole-Wheat Buttermilk Pancakes

These were amazing! I loved everything about them from the ease of preparation to the nutty healthy flavor. We will be making these for years to come!! I added 1/4 cup brown sugar because we like our pancakes a little bit sweet and that way my 1 year old can eat them without messy syrup.

Bread Machine Calzone

This is a great recipe! We made two, one as suggested in the braid and one that looked like a traditional calzone pocket. Add whatever you like as filling, serve with pizza or marinara sauce on the side. Crust was so tastey, chewy but not heavy -- although my crust never got golden brown, stayed pretty pale even though it was done.

Mom's Best Waffles

Three stars because they are easy and have basic ingredients most people have on hand. The taste was okay, the texture was way off. They were way too dense and 'bready'... my husband immediately asked, did you change the waffle recipe? (I tried these because I was out of ingredients for our usual waffles) he only took two bites and the rest went into the garbage. I found they taste best when very lightly browned and immediately buttered and doused with syrup. If you make them golden brown they are over done and way too chewy. They aren't that bad if you aren't picky, but we have waffles all the time and these just did not cut it.

Lemon Bundt Cake

This cake tasted great and was so easy to make. I added 2 tablespoons of poppy seeds since I'd been craving a lemon poppy seed cake for a while. I used Mt. Dew brand soda which worked out great. You do need to add some extra baking time, I did 15 more minutes and my cake was perfect. It is so moist and melts in your mouth.
